How To Make a Milkfree Carrot Cake
Lactose Intolerant ?
This is a remedy for those people who suffer from that malady! It is a pleasant tasting and a very popular line for me. Had to make 9 of these for various friends etc., all to be ready on Christmas Eve, it took some doing I can tell you as my oven is small and could only bake a cake at a time. Try it and watch as the cake disapears.
Actually make 2, but do not let them see the other!
Milk Free Carrot Cake
Ingredients
250g White Sugar
250ml Oil
3 Extra Large Eggs
Zest of half an Orange
100g Of Pecan Nuts
500ml Freshly Grated Carrots
Dry Ingredients
330ml Flour
2ml Salt
2ml Baking Powder
2ml Cinnamon
2ml Baking Soda
Method

Preheat the oven to 180°Celsius

Grease a couple of small baking pans well

Cream the sugar and oil.

Add the eggs one by one to the mixture - blend well

Sift the dry ingredients and add to the mixture - blend well

Add the Zest and Pecan Nuts - blend well

Add the carrots and mix until well blended.

Pour the mixture into the baking pan/s.

Bake in the centre of the oven for 30 minutes or until golden brown.

Remove from the oven, place it on a cooling rack

Remove from the baking pans after 15 minutes.
Once the cake has cooled down, you can add a touch of frosting to it.
Zest the rest of the orange and add some of the juice to a bowl, now mix some Icing Sugar with and mix until it is smooth and thick or thin enough to cover the top of the cake.
