Bibb and Grapefruit Salad - serves 2

1 1/2 cups torn Bibb lettuce leaves
1 medium pink grapefruit (about 1 pound) peeled and sectioned (reserve juice)
2 tablespoons sliced scallion (green onion)
1 teaspoon each finely chopped cilantro (Chinese parsley) or Italian (flat-leaf) parsley peanut oil, White wine vinegar and Dijon-style mustard
Dash crushed red pepper

Line serving platter with lettuce; decoratively arrange grapefruit over lettuce and sprinkle with scallion.
Using a wire whisk, in small mixing bowl

beat together reserved grapefruit juice, cilantro, oil, vinegar, mustard, and pepper. Pour over

salad and serve .
