Kabobs for Father's Day Summer Menu

For Father's Day, Memorial Day, the Fourth of July or any summer weekend treat

Kabobs are quick, easy, nutritious, and attractive for a summer grilled meal, for a holiday or anytime. Dad would enjoy helping, or happy to sit an watch as you do the fixings and the grilling. Enjoy this great summer meal menu in a few easy steps.

I took this picture as we grilled the deck of the home of our daughter and son-in-law, overlooking Capital Reef National Park this past week.

The recipe for the Teriyaki Chicken Kabobs as well as the Pineapple Kabobs is provided, below. Following that is the Veggie Kabob recipe in my featured lens below that. Have a great summer of grilling. ;-)

This is the recipe of Teriyaki Chicken Kabobs. Pineapple Kabobs are also suggested, below. In addition, we fix Veggie Kabobs at the same time. That recipe is in the Featured Lens, below. This makes a great meal for 4 or 5, and there may be some neat left-overs that are good, as well.

Complement the chicken with fresh pineapple Kabobs:

Remove the pineapple crown

Cut off the tip and base

Cut off wide strips of the remaining peel

Remove any remaining 'eyes'

Slice pineapple into disks

Cut into 1 1/4' chunks - coring or removing and discarding the tough center portions

Thread pineapple chunks onto skewers, brush with marinate, turn Kabobs once, and grill for 12 to 15 minutes.

Prep Time: 2 hours

Total Time: 2:20 hours or so

Serves: 4-6

Ingredients

  • > 2 lbs. fresh
  • boneless chicken breasts (If present
  • remove skin)
  • 1/2 cup soy sauce
  • 1/4 cup olive oil
  • 2 teaspoons dry mustard
  • 2 teaspoons ground ginger
  • 4 garlic cloves
  • finely minced

Instructions

  1. Wash chicken, cut into 1" to 1 1/4" chunks
  2. Prepare Teriyaki marinade (using all ingredients except the chicken)
  3. Marinate chicken for 1-2 hours in refrigerator
  4. Soak bamboo skewers 30 minutes prior to cooking
  5. Ready to cook, begin by threading marinated meat onto bamboo skewers
  6. Grill at medium heat for 18-20 minutes, turning to new side every 7-8 minutes.
  7. Bast with remaining marinate each time that you turn Kabobs on the grill.

In the photo I took earlier this week, Larry, my son-in-law, is basting a Veggie Kabob for the grill. Note that some Teriyaki Chicken Kabobs are already on the grill. Nice background, as well - those are the waterpocket fold cliffs of the Capital Reef National Park in the background of the deck of Larry and Annette's home in south-central Utah.
