Beth's Mom's Best Ever Banana Cake

An all time favorite year round.  It's easy to make...even the children can get their hands into it!

Ingredients:

1 ½ cup flour

1 tsp. baking soda

1 tsp. salt

½ cup oil

1 ½ cup sugar

2 eggs

1 tsp. vanilla

1 tsp. baking powder

½ cup sour milk

2-3 bananas, ripe

½ cup nuts, chopped

To make the sour milk, add ½ tsp. vinegar to the milk and let sit for 5 minutes.

Mix the ingredients together in the order listed. When mixed thoroughly, you can turn it out into a large cake pan and bake at 350 ° F for 50 minutes or until done. I suggest lining the baking pan with parchment paper so that it is easier to take the cake out of the pan after baking.

This cake freezes extremely well. In fact, the kids and I quite often freeze the cake and slice off thin slices. We enjoy these frozen slices as they taste very much like frozen banana ice cream. Makes a great hot summer day treat!

This is the only recipe that I use, and when I bake, it's in large batches!! After writing about food for the past 3 hours, I'm a little hungry!!!

This banana cake sounds just like my banana bread recipe. I never tried adding the sour milk though. I will give that a try.
