Cruelty Free is Best

I enjoy chicken. The recipe below is simple and tasty. I do prefer to use organic or cruelty free chicken, but when you consider the end result for the chicken, cruelty free can raise concerns.

It is important to give thought to how your food travels from where it is grown to your table.

Chicken is a great food for anyone who is looking to lose weight while eating tasty and healthy meals. The old saying that “it tastes just like chicken” simply proves what a versatile food chicken is.

When I can I buy free range and/or organic chicken. Free range is a way to raise chickens that allows them some freedom of movement. It does not mean that the birds are running free around the farm, although it could mean this. There is also a possibility that the chickens are simply not penned up in individual cases. The regulations are somewhat lax.

Recipe: Black Pepper Chicken

Ingredients:

2-4 chicken legs or breast, I used legs for this recipe.

1 medium red pepper diced

1 medium green pepper diced

1 cup yellow beans, diagonally sliced

1 cup green beans, diagonally sliced

Black pepper sauce (available in supermarket or specialty store)

Sea salt to taste

1 teaspoon olive oil

Preparation;

You can prepare the chicken legs overnight.

Coat chicken legs in black pepper sauce.

Put them in refrigerator for minimum2 hours,

Slice and dice vegetables,

Place chicken in roasting pan half cover chicken with water, add sea salt.

Cover pan with tin foil.

Place pan in pre-heated oven (400F)

Let chicken cook for 30 minutes, and then peel back foil to turn legs over, put the foil back in place.

When the chicken has been cooking for one hour, put olive oil in frying pan, heat, then add all vegetables.

Remove foil from chicken; add a bit of water if needed. Cook another 15 minutes.

Stir vegetables every 5 minutes cook until tender but still firm.

Put legs on plate add vegetables and serve, this recipe feed 2. To serve 4 double amounts.

You can add black pepper sauce to stir fry if you like a more peppery and tangy flavour. Or add your favourite hot sauce to give it that extra zest.
