Brownies are a fun family dessert that most kids and adults love. They're usually pretty good when you make them from the box- the pour in brownie mix, add water, stir, and bake recipes. But, they're even better when you know that you made them from scratch.
Below are a few of my favorite brownie recipes. They're easy, quick, and yummy!
Chocolate- Cream Cheese Brownies
Ingredients:
- 1- 6 oz package of semisweet chocolate pieces (1 cup)
- 2 tablespoons butter
- 1/2 cup all- purpose flour
- 1/2 teaspoon baking powder
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1/4 teaspoon salt
- 1 cup sugar
- 1/2 cup chopped walnuts (optional)
- 1- 3 oz package of cream cheese, softened
- 1 beaten egg
Directions:
Preheat oven to 350F. Grease and lightly flower an 8x8x2 inch baking pan. Melt the chocolate and butter, and let cool.
Mix the flour, baking powder, and 1/4 teaspoon salt. In a mixer, beat 2 eggs and 1 teaspoon of vanilla, gradually adding 3/4 cup of sugar. Continue to beat the eggs until thick and a lemon color.
Add the dry ingredients to the egg mix; beat until well mixed. Stir in the chocolate and nuts.
In a separate bowl, beat the cream cheese and remaining 1/4 cup of sugar until fluffy. Stir in the remaining beaten egg and 1/2 teaspoon of vanilla.
Spread half of the chocolate mixture into the pan. Pour the cream cheese mix on top of the chocolate. Then pour the rest of the chocolate mixture on top.
You can swirl layers to marble if desired.
Bake at 350F in oven for about 45 minutes. Cool on a wire rack. Cut into bars.
Blonde Brownies with Chocolate Chips
Blonde Brownies
Ingredients:
- 2 cups all- purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup butter
- 2 cups packed brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup chopped walnuts (optional)
Directions:
Preheat oven to 350F. Grease a 13x9x2 inch baking pan.
Combine the flour, baking powder, and 1/4 teaspoon of salt in a bowl.
Mix together the sugar, eggs, vanilla, and melted butter and stir until well mixed.
Add walnuts to the flour mixture. And slowly add flour mixture to the sugar mix.
Spread in the pan. Bake at 350F for 20 to 25 minutes. Cut into bars while warm.
Fudge Brownies
Ingredients;
- 1/2 cup butter
- 2 squares unsweetened chocolate (2 ounces)
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 3/4 cup all- purpose flour
- 1/2 cup chopped walnuts (optional)
Directions:
Preheat oven to 350F. Grease an 8x8x2 inch baking pan.
Melt the butter and chocolate. Remove from heat and stir in the sugar. Add the eggs and vanilla and beat lightly until ingredients are combined (do not over beat of the brownies will rise too much and fall over the pan).
Stir in the flour and nuts. Spread in the pan.
Bake at 350F for about 30 minutes. Cool then cut into bars.

Okay...right after I posted that comment, I went downstairs, turned on the oven and made a double batch (I've got a husband and a house full of kids) of the fudge brownies. I was going to do the cream cheese (because it called for semi-sweet chocolate chips and I knew I had those) but didn't have any cream cheese. I had to substitute extra dark Hershey's chips for the baking chocolate, but it worked and they were wonderful.
