Carrots in Cream - Irish Slieve na Mbam
Slieve Na Mbam
I'm always looking for good ways to get more of the 'power foods' into my children. Carrots are full of all kinds of good things - beta carotene, vitamin C, fiber...The only problem is that all four of my kids hate them.
BUT! They like these! Redemption! Something lovely and magic happens when they're simmered in milk. The flavor of the carrot mellows and softens, and the end result is not just beautiful, but absolutely delicious.
Slieve Na Mbam Carrots
· 10-12 medium carrots, peeled and sliced
· 2 Tbl butter
· ½ cup milk
· 1 tsp
· 1 tsp pepper
· ½ cup heavy cream
· 2 egg yolks, lightly beaten.
· 1 Tbl fresh parsley, roughly chopped
In a heavy bottomed saucepan over medium low heat melt butter. Add carrots and milk, salt and pepper. Bring just to a simmer, about 15 minutes.
Remove from heat. Stir in cream and egg yolks. Bring back up to temperature, but do not allow them to boil at this point – the cream will curdle and separate.
Taste for seasoning and re-season in necessary. Sprinkle with the chopped parsley.
In Ireland there is a mountain called The Mountain of Women. The top is somewhat reddish, and the mountain crest peaking over the milky mist at the bottom is supposed to look like this dish. In theory the cream with carrots peaking through looks like The Mountain of Women, or Slieve Na Mbam.
