Chocolate Eclair Cake

Chocolate is something most of us love. Some of us probably even have too much of it at times, like myself. Anyway I do love a good Chocolate cake and I especially love this Chocolate Eclair Cake. Simply delicious. This hub has the best Chocolate Eclair Cake recipe.


Chocolate Eclair Cake Recipe

Ingredients

1 box graham crackers

2 pkg. instant French vanilla pudding

9 oz. Cool Whip

3 tbsp. milk

2 3/4 c. milk

2 tbsp. white corn syrup

3 tbsp. soft butter

2 oz. semi-sweet or unsweetened chocolate squares

1 1/2 c. powdered sugar

2 tsp. vanilla

13x9 inch pan

Start by lightly greasing a 13x9 inch pan.

Take the 2 packages of instant French vanilla pudding and mixwith 2 3/4 cups of milk and beat this well with a mixer. Now add in the Cool Whip and beat it all together.

Pour 1/2 of this mixture over the graham crackers that you previously lined the pan with. Add the remaining graham crackers or however many it takes to add another layer and then pour the remainder of the pudding over the crackers. Top with a third layer of graham crackers.

Now it is time to make the topping. Start by melting 2 oz semi-sweet or unsweetened chocolate squares, 2 tbsp. white corn syrup, 3 tbsp. milk, and 3 tbsp soft butter in a pan. Then add 2 tsp vanilla and 1 1/2 c. powdered sugar.

Spread this topping over the top layer of graham crackers. Refrigerate overnight and enjoy your Chocolate Eclair Cake!
