Jamaica is one of the countries that have a significant amount of coconut. Grown bountifuly on the island the people enjoy creating recipies with these coconuts.The coconut custard pie is one of the many dishes they create

Coconut Custard Pie

Ingredients

Pastry

6 0zs Flour

3 ozs. Butter

1 oz sugar

¼ tsp.salt

½ cup ice water

Method

Put all dry ingredients into a mixing bowl. Use a knife to cut in flour.

Use the finger tips to rub in butter into flour until the mixture looks like find dread crumbs

Use Ice water a little at a time to form dough, knead lightly.

Roll out and line an 9-10ins pie pan. Prick the bottom with a fork .Set aside in a cool place

 

Filling

Ingredients

1.large dry coconut gartered

!/2 cup brown sugar

1 cup milk

2 eggs

6 maraschino cherries

 

Method

  • 1. Beat eggs, and set aside .Bring milk to boil and cool, add to beaten eggs.
  • 2. Add sugar and coconut, vanilla, and nutmeg and stir.
  • 3. Pour mixture in to pie and bake at 400°F, reduce heat after the first 10 minutes to prevent custard mixture from curdle.
  • 4. Cook until pastry is golden brown .Garnish with cherries
  • 5. Serve warm or cold .Serve 4-5
