When my husband was diagnosed with diabetes, I was overwhelmed. What to cook for diabetic meals? I started buying diabetic cookbooks left and right. I now have a diabetic cookbook or two that I keep handy on my kitchen counter.

The Best Diabetic Cookbook, In My Opinion
The Betty Crocker Diabetes Cookbook has been a true lifesaver, maybe literally. After going through so many diabetic recipes, I was about to throw in the towel and just let my husband live on salads and chicken breasts for his diabetic meals. I don't think he would have lasted long on a diabetic diet like that!
Thankfully, I found the Betty Crocker Diabetes Cookbook. I have always liked Betty Crocker cookbooks, so I don't know why I didn't try the diabetic cookbook sooner.
Why I Like The Betty Crocker Diabetes Cookbook
I like it because it has lots of diabetic recipes to choose from, it includes healthier versions of traditional recipes, and it has many recipes with ingredients that I already own.
Also, I can use recipes from this diabetic cookbook for the whole family and no one complains about the diabetic meals.
And it has lots of colorful photos that will inspire you.
Diabetic recipes for breads, breakfast, fish, chicken, soups, snacks, different meats , and even diabetic desserts are all included, along with a section on living with diabetes in general.

Reasons You May Not Enjoy The Betty Crocker Diabetes Cookbook
Although this is my favorite diabetic cookbook, I do have a few complaints.
For a diabetes cookbook, it has many recipes that I would never make. It has several diabetic recipes that include too much white flour or sugar for my comfort. And there are a few recipes that are too high in fat.
I just avoid those recipes. There are too many diabetic recipes included in the cookbook that are both delicious and healthy to bother with the others.
4 Ingredient Diabetes Cookbook
Another Favorite Diabetic Cookbook - The 4 Ingredient Diabetes Cookbook
The 4 Ingredient Diabetes Cookbook is another favorite diabetic cookbook that I own. It is written by a nutritionist, so you know the recipes should be suitable for diabetics.
The main reason I like this cookbook so much is because of the title. In other words, this diabetic cookbook is packed with easy diabetic recipes that I can throw together when I'm running late, tired, or just having a bad day. This is a lifesaver when you need diabetic meals without thinking about it.
A Few 4 Ingredient Diabetes Cookbook Features
Just because there are only four ingredients doesn't mean that these diabetic recipes are bland. There are some great recipes for diabetics included. A few examples are Lemon Asparagus Salad, Taco Rice, Roasted Vegetables, and Beef with Grilled Onions. There are diabetic recipes for about anything, including diabetic desserts, meats, salads, beverages, side dishes, entrees, poultry, and vegetables. Think of the delicious diabetic meals you can eat!
Another excellent feature of this diabetic cookbook is that the recipes don't include expensive or impossible to find ingredients that I will never use in other diabetic meals. I can make most of these recipes with items I already have in my kitchen or that I buy on a regular basis anyway.
Yet another reason to buy this diabetes cookbook is that most of the recipes are done in an hour or less, including prep time. And with only four ingredients, none of the recipes require extensive preparation.
Why You May Not Like The 4 Ingredient Diabetic Cookbook
Possible reasons not to buy this diabetic cookbook:
There aren't a lot of photos if you like to see the finished results before trying a recipe.
A few of the diabetic recipes can be a little bland, as is expected with only four ingredients. However, boring recipes are few and far between. And the recipes are easily adapted with the addition of a few herbs or spices. But if you're a beginner cook, it may be frustrating.
I do recommend this diabetic cookbook for beginner cooks, regardless of what was mentioned above. This is because only a few of the recipes need tweaking. Most of them are delicious as is! And all of them are easy diabetic recipes to make.

The Fix It and Enjoy It Diabetic Cookbook is another valuable kitchen resource for diabetic meals. It is written by a best-selling cookbook author and the recipes have been approved by The American Diabetes Association.
Some reasons I like this diabetes cookbook:
- It's loaded with diabetic recipes to make on your stove or in your oven- over 500!
- Most of the recipes are low in fat and carbs.
- The recipes aren't overly complicated. Most require just a few ingredients.
- The diabetic recipes include ingredient lists that I'm familiar with and use often. No exotic or expensive ingredients here.
- Each recipe has nutritional information and exchange values for easy planning of diabetic meals.
- All of the recipes have been tested.
One of the best things about this diabetic cookbook is its value for anyone newly diagnosed with diabetes. The recipes are easy to follow and prepare, and they taste good. But that's not all. There is an included diabetic section that has a week's worth of diabetic meals menus to save a person a lot of time and frustration when trying to figure out a suitable diabetic menu.
About the only thing I don't like about this diabetic cook book is the lack of photos. Sometimes a photo can really be inspiring.
Basic Guidelines for Planning Diabetic Meals
Keep in mind that with a diabetic diet, you still should keep your food choices to mostly vegetables, regardless of how many delicious diabetic recipes you find. Also limit fats and carbs in general when planning your diabetic meals.
