Cardamom Fudge
Ingredients:
2 Cups Sugar
2/3 Cups Milk or Soy Milk
1/4 tsp. Salt
2 TBLS Light Corn Syrup
2 TBLS Butter
3/4 tsp Ground Cardamom
1/4 Cups Finely Chopped Walnuts
1/4 Cups Finely Chopped Pistachios
Instructions:
Cook sugar, milk, salt and corn syrup in a 2-quart saucepan over medium heat. Stir constantly until sugar is completely dissolved. Continue to cook, stirring occasionally, to 240F on candy thermometer or until small amount of mixture dropped into very cold water forms a soft ball that flattens when removed from water. Remove from heat and add butter. Let mixture cool to 120F without stirring. I just test the bottom of the pan, when it feels lukewarm it should be ready for the next steps. Add cardamom and beat vigorously and continuously until candy is thick and no longer glossy. This will take about 7 minutes. Stir in nuts and spread into a buttered 9x5x3-inch loaf pan. Let stand until firm and cut into small squares. This is a very rich fudge and tastes great with cold milk, coffee, or hot tea.
