Easy and Delicious Chicken and New Potato Casserole Recipe

Here's a great new twist on the tried and true chicken casserole! Most chicken casserole recipes are based on the use of pasta or rice, but this one is different. It still combines chicken with a starch and a variety of veggies, but the starch base is the rather unexpected addition of red potatoes. These tasty tubers are a delicious addition to any recipe, and they have the added benefit of being both nutritious and affordable!

Chicken and New Potato Casserole Recipe

Ingredients

3 cups of chunks of cooked chicken (this recipe is a great way to use up leftover chicken!)

8 small red potatoes, cut into quarters

1 bag of frozen mixed vegetables (like the style used for soup: carrots, corn, green beans, limas, etc.)

1 can of cream of chicken soup

2/3 of a cup of water

Salt and pepper to taste

Instructions:

Preheat oven to 350 degrees and spray an 8 1/2 X 11 casserole dish with non-stick cooking spray.

Pour the cream of chicken soup and water into a bowl and stir to combine. Fold in the vegetables, potatoes, and chicken. Season with salt and pepper.

Place the chicken, soup and vegetable mixture into the casserole dish, and spread out evenly in the pan.

Place in the oven and bake for 1 hour or a little longer if needed to fully cook the potatoes.

It's perfect for weekend dinners, especially following a leisurely afternoon of watching movies at home or working on home improvement projects.

You can prepare this dish ahead of time and then stick it the oven about an hour or so before your movie is over or you're ready to quit working around the house. Set the oven timer, and let the distinctive ding that alerts you that dinner is ready be the sign that it's time to start what you're doing and enjoy a delicious, home cooked meal with your family.

Recipe Variations:

  • You can use a different type of frozen vegetable mix and end up with a completely different dish. Try using a packed that includes some or all of the following: broccoli, cauliflower, squash, red peppers, mushrooms, onions, snow peas, etc.
  • You can also change the flavor by using cream up mushroom or cream of cheddar soup instead of the cream of chicken variety.
  • If you have leftover turkey or ham in your refrigerator, try using them instead of chicken.
