Green Tea Rice Pudding

Ingredients

  • 1 quart (4 cups) skim milk
  • 1/3 cup rice
  • 1/2 cup sugar or Splenda
  • 1 1/2 Tbsp green tea powder
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1/3 cup raisins (optional)
  • 1/2 tsp cinnamon (optional)

Instructions

In medium saucepan, whisk together green tea powder and milk. Add rice, sugar, vanilla, and salt. Bring to a boil, then reduce heat and simmer until rice is tender, about 30 minutes, stirring regularly to prevent milk from scorching and rice from sticking to the pan. Add raisins and cinnamon (if desired), simmer 10 more minutes. Remove from heat and pour into serving or storage container. Let sit at room temperature 2-3 hours until thickened. Store in an airtight container in the refrigerator.


Green Tea Berry Pudding

Ingredients

  • 1 quart (4 cups) skim milk
  • 2 Tbsp green tea powder
  • 1 cup cornstarch
  • 2 cups frozen berry juice concentrate
  • 2 Tbsp honey (or to taste)

Instructions

In medium saucepan, whisk together skim milk with green tea powder. Add cornstarch, juice concentrate, and honey (if desired), and bring to a boil over medium heat. Reduce heat and simmer 3 or 4 minutes until mixture starts to thicken, stirring constantly. Pour into container and chill 2-3 hours or until set. Serve cold topped with fresh berries.

Quick Green Tea Protein Pudding

Ingredients

  • 2 12-oz pkg lite silken tofu
  • 6 oz frozen juice concentrate (flavor of choice)
  • 1 tsp green tea powder

Instructions

Add all ingredients to blender or food processor and process until smooth. Add honey to taste, if needed.

Green Tea Frozen Yogurt

Ingredients

  • 2 1/4 cups evaporated skim milk
  • 1/2 cup white sugar or substitute
  • 1 envelope gelatin powder
  • 1/8 tsp salt
  • 1/2 cup warm water
  • 2 tsp green tea powder
  • 1 1/2 fat-free vanilla yogurt
  • 1/2 cup light corn syrup

Instructions

In medium saucepan, whisk together milk, sugar (or substitute, like Splenda), and gelatin. Let stand 1-2 minutes. Meanwhile, in separate bowl, mix together warm water and green tea powder. Set aside. Place saucepan with milk mixture over low heat and warm, stirring constantly, about 5 minutes or until gelatin is completely dissolved. Let cool to room temperature, then whisk in green tea mixture, along with yogurt and corn syrup. Cover and chill overnight. Transfer to ice cream machine and prepare according to manufacturer's directions.

Yummy! I absolutely love matcha and I love trying it out in various ways, adding it to different recipes like matcha latte, matcha cakes, matcha muffins, matcha ice cream, matcha truffles, etc. (you get the idea). I remember reading an article stating that one cup of matcha is equal to 10 cups of regular green tea. It doesn't get any better ^_^

If you really don't like green tea at all, you might want to try lower amounts of matcha powder until you see how much you can tolerate. You'll probably find that you get used to the taste, and can increase the amount of green tea in the recipes over time.
