Another Great Version Of Grilled Roasted Yard Bird
Okay here's another great version of the grilled roasted yard bird. In this version again I suggest you purchase two plump fryers and soak them overnight in any good Italian Dressing. Be sure to cover the chickens completely with the Italian Dressing.When you remove your chickens from the Italian Dressing wash well with cold running water.
Now in a squirt bottle mix vegetable cooking oil and apple cider vinegar in a half and half solution. And your going to have a large container of lemon pepper seasoning in a shaker type container. Take your washed chickens and squirt them down with the shook up squirt bottle of vinegar and oil. Massage it into them to coat them well. Don't miss the body cavity. Now sprinkle your chickens well with the lemon pepper seasoning both inside and out.
Grill your whole chickens breast side down on a wire rack on your grill. You want your grill to be hot but about medium heat wise. Your chickens will cook in 2 1/2 to 3 hours and you want the thickest inner portion of your chicken to reach an internal temperature of 165 degrees.

How To Cook Grilled Roasted Yard Bird
I'm going to tell you my secrets about grilled roasted yard bird and how you can easily prepare the most delicious grilled baked chicken you will ever eat. When I go hunting for my yard bird down at the local grocery store I always try to bag two of them so I end up with plenty of delicious grilled roasted yard bird. And I have some left over for sandwiches the next day or I can grind it up in my food processor and prepare a delicious chicken salad.
Like I said you will want to purchase two plump fryers and to prepare them for cooking soak them overnight covered in Italian Dressing. When you get ready to cook them sprinkle them well with fresh ground sea salt, black pepper and ground cayenne pepper. Don't forget to sprinkle your spices inside the body cavity's of your yard birds.
You will want your grill to be hot on low heat and if possible you want a wire rack to place your fryers on breast side down. Close them up in the grill and let them cook on low heat for 2 1/2 to 3 hours. You want your meat thermometer inserted inside the thick part of your chicken breast to read 165 degrees. By cooking your fryers breast side down you will end up with more tender moist chicken.
