Low-Fat Jack O' Lantern Cake

This cake is an easy halloween food, because it uses ready-made ingredients like pudding and cake mixes and cool whip which simplify the recipe and speed up prep time, and the natural contours of bundt pans to create a pumpkin-shaped cake!

Use whatever flavors of cake and pudding mix you like for your bundt cakes. (A few great combinations are: devil's food cake with chocolate pudding, white cake with vanilla pudding, white cake with white chocolate pudding, and lemon cake with lemon pudding.) For the frosting, use a light-colored pudding flavor, such as white chocolate, vanilla, or even cheesecake flavor (it goes great with chocolate cake).

Make sure to leave enough time for your cakes to cool before decorating, and pick up some black decorating icing to add your Jack o' Lantern's facial features! It's a great way to get your kids involved, especially if they're too young to carve a real pumpkin themselves!

Ingredients

Bundt Cake:

  • 2 boxes cake mix
  • 2 large boxes instant fat-free pudding mix
  • 3 cups water
  • 1 cup vegetable oil
  • 2 cups fat-free egg substitute
  • powdered sugar (for dusting)

Frosting:

  • 1 large box fat-free instant pudding mix (light color, eg vanilla or white chocolate)
  • 2 cups skim milk
  • 16 oz (2 tubs) low-fat or fat-free cool whip
  • powdered sugar (as needed)
  • red and yellow food coloring

 

Instructions

Preheat oven to 350 degrees Fahrenheit. Whisk together cake and pudding mixes. Add wet ingredients and stir until completely combined. Spray two bundt pans with nonstick cooking spray, dust with flour, and divide batter evenly between the two pans. Bake 30 to 40 minutes, until a toothpick inserted into the cake halfway between the inner and outer rim comes out clean. Release cakes from pans by gently inserting a knife between cake and outer rim. Let cool completely in pans before assembling.

For frosting, beat together pudding mix and milk for one minute, then mix in cool whip and powdered sugar as needed to bring to a useable consistancy. Beat in yellow and red food colorings to bring icing to a suitable orange color. Take one cooled bundt cake and turn it upside down. Spread a thin layer of frosting over the flat surface, then place other bundt cake on top to create your pumpkin shape. Frost the outside of the cakes, then use black decorating icing to draw Jack O' Lantern features on one side. Refridgerate until ready to serve.
