Hearty Beef and Beer Main Dish Recipe

This recipe makes a great meal idea for any day of the week, although it does require quite a bit of time in the oven. I often put this dish together on Saturday or Sunday mornings and allow it to bake while taking care of other tasks around the house. That way, when we're ready for lunch, we have a delicious homemade meal waiting in the oven.
Hearty Beef and Beer Main Dish Recipe
Ingredients
- 2 pounds of lean stew meat
- 1/4 cup of extra virgin olive oil
- 6 onions (red, yellow, or white)
- 1 tablespoon minced garlic
- 12 ounces of beer
- 1 bay leaf
- 1/2 teaspoon of thyme
- 5 tablespoons of flour
- 2 tablespoons of parsley
- 1/2 teaspoon of paprika
- Salt and pepper to taste
Cooking Instructions:
In a medium bowl, combine the flour, salt, pepper, parsley, and paprika. Mix well, getting spices as evenly disbursed throughout the flour as possible. Place the meat cubes into the flour and spice mixture, tossing gently to coat.
In a large skillet, heat the olive oil. While oil is heating, peel the onions. When the oil is hot, add the onions and garlic and sauté until tender. Remove the onions. Place the meat into the skillet and brown.
Preheat the oven to 325 degrees. In a 10 X 13 casserole dish, place the browned meat, sautéed onions, garlic, beer, bay leaf, and thyme into the casserole dish. Cover and bake for approximately 3 hours, or until meat is very tender.
Serving Suggestion:
This dish is delicious served with roasted new potatoes. To prepare the potatoes, line a cookie sheet with aluminum foil. Lightly coat the cookie sheet with olive oil. Cut the potatoes in half and place them in a single layer on the cookie sheet and sprinkle with your favorite seasonings. I like to use Tony Chachere's Creole Seasoning, but you can also use salt and pepper, or any other seasonings that you enjoy.
Place the potatoes in the oven during the last hour that the meat is cooking. Both dishes will be ready around the same time, and you'll be able to enjoy a hearty meat and potatoes meal.
