Here is another recipe from “The Cupboard Drawer”, originally published by my mom. Dorothy had six kids and a job as a school teacher, my Dad had a forty five mile drive to and from work, so he was not home in time to help with dinner; so recipes that were time savers were common in our house. They did not how ever, deviate from the requirement to produce a good product. Food on the table was wholesome and “Country” good. With that in mind I give you Fast Action Pumpkin Pie, Do take the time saved and enjoy..

Preheat Oven to 350 Deg

Ingredients

¾ Cup Granulated Sugar

½ Cup Biscuit Baking Mix

2 Tbsp Butter softened

1 Can (13 oz) Evaporated Milk

2 Eggs

1 Can (16 oz) Pumpkin (Pie filling will work if you can’t find just Pumpkin any more)

2 ½ Tsp Pumpkin Pie spice (Leave this out if you use the filling)

2 tsp Vanilla

  1. Prepare a 9 in Pie Plate w PAM, set aside.
  2. Put all ingredients in a blender and beat on high for 1 minute. (or a medium Mixing bowl and 2 Mins with a hand held beater)
  3. Pour into Pie Plate.
  4. Bake in 350 oven for 50-55 minutes or until knife inserted in center comes out clean. The Pie makes its own crust. (Another miracle of old fashion food chemistry!)

Yield 4-8 servings (I only get four [I like my pieces big] but you might get more)
