People ask how do you cook roast so this is one way we do it cooking outside . It is beautiful when cooked on an open fire

Pork roast how to cook

As you travel around the countryside maybe you are wanting to cook a roast lamb or roast pork, roast beef & not sure how to do this successfully then have a read here as learning to cook a roast can be a bit daunting but it isn't as hard as you might think & if your roast meat is big enough there can be some left to last a few days which is always handy for extra meals through the week either as a lunchtime snack or another meal..

If you are feeling adventurous as you travel around the country you might like to give it a go on the open fire while camping as it taste so much better when cooked this way !

Make sure you do this on a day you have plenty of time so you don't feel rushed. and you get to enjoy the experience with your family.

Cooking a roast !


I was fortunate as far as cooking goes as my mother used to make roast meals a lot when I was younger & I have now been cooking roasts for over 25 years. Find a good size pork roast.( or Lamb, beef, I buy whats on special that day ) I flavour it by putting little cuts in the meat & sticking small bits of garlic in deep and any other herbs you would like to try .

If you want crackling which I cant imagine not having look for a good coverage of fat & rind such as a leg or a rack , rolled shoulder, these are all good for roasting.

A nice marinade spread nearly all over it goes down well & there are many different flavours to try according to your individual tastes.

Sometimes I will marinade it overnight for extra flavour , maybe in garlic & red wine or one of a shop bought one as they can be really tasty.

A new & unusual marinade I used is kiwifruit & tequila which was nice for a change.

shake some salt on the rind to help it goes crispy and delicious ! yum !

Heat the oven , I have gas so turn it up high for a while then I turn it down so the pork will be tender. about 220 to start for 20-30 minutes then down to about 180.

On another tray I put cut up potatoes,carrots , pumpkin & later add an onion with a bit of oil.

We love our veggies crispy & a bit dark so keep an eye on them .

When its been in a couple of hours check the inside with a knife to see if the meat is well cooked.

When it is then leave it sitting for about 10 minutes then put the meat onto a plate to be sliced up,

Get some cornflour mixed in a bit of water to be added to the meat juices in the pan for your gravy.

You can even cook this on an open fire like my picture!

All you need now is a nice bottle of Australian wine & the right company to enjoy it with !
