Inniskillin Icewine
Inniskillin Icewine is a delectable type of dessert wine that has been harvested from grapes that have been left to freeze on their vines. These grapes produce a sweetly intense wine with balanced acidity and a long lasting finish. Icewine flavors come ranging from mango to peach to fig to lychee.
Although Icewine's history can be traced to Germany, in the last three decades Canada’s frigid winter months have allowed for the growth of many award-winning ice wine wineries in that country. In particular, Ontario’s Niagara Peninsula and British Columbia’s Okanagan region have helped make Canada the largest ice wine producer in the world. Today, the world’s most well-known ice wine producer is the Niagara region’s Inniskillin Winery.
Harvesting ice wine grapes is very tricky. The grapes much stay on their vines for months after a normal usual harvest takes place, leaving them vulnerable to pests and animals. The grapes are collected only after temperatures consistently drop eight degrees Celsius below zero. The harvest and the pressing process must take place rapidly, since once collected, the grapes must be pressed immediately while they are still frozen. When pressed, the juices of the grapes remain frozen, leaving only a few crystal drops of flavor-packed liquid per grape. Only small amounts of wine can actually be produced by this process, so Inniskillin Ice Wines might be expensive relative to other wines (but they are worth it).
