Authentic Mexican Recipes Aren't Just Beans and Tacos

Easy Mexican Recipes

When I was living in New Mexico, I was introduced to many easy Mexican recipes. I really enjoyed authentic Mexican recipes. Some of the most simple Mexican recipes that I learned to make were Mexican chicken recipes. I thought I was going to include my favorite Mexican chicken recipe, but found that I could not choose between two of them- one a Mexican crockpot recipe and the other is an unusual authentic Mexican food recipe called mint chicken. Enjoy both of these simple Mexican recipes that taste great.


Authentic Mexican Chicken Recipe - Mint Chicken

Mint Mexican Chicken Ingredients

1 whole chicken, cut up or chicken thighs

1/2 cup fresh mint, finely chopped

1 cup orange juice

1/4 cup sugar

3 cloves garlic, finely chopped

1 tablespoon orange zest

1/3 cup rice vinegar

Soak fresh mint in orange juice, sugar, garlic, and orange zest. While the mint is soaking, fry the chicken as usual. Salt and pepper the fried chicken pieces last and let oil drain. Heat vinegar to boiling and add the mint mixture. Pour over the hot fried chicken. Cook covered til chicken is tender, about 5 minutes. Serve hot. Optional serving suggestion is to serve over rice.

This Mexican chicken recipe also tastes great when made on the grill. If you choose this option, marinate the chicken in the mint mixture for about 2-3 hours. Grill the mint Mexican chicken on medium heat until done, basting with reserved marinade occasionally.


Mexican Chicken Recipe #2 - Drunk Mexican Chicken Casserole Recipe

Drunk Mexican Chicken Ingredients

1 whole chicken, cut up

1 small onion, chopped

4 cloves garlic, chopped

1 pound potatoes, sliced but not peeled

1 cup each- chicken broth and dark beer

1/4 cup pickled jalapeno peppers (more or less, to taste)

1 chopped tomato

1 teaspoon allspice

1/2 teaspoon Ceylon or cinnamon

Saute garlic and onions in butter until golden. Be sure not to burn the garlic or it will taste bitter. After cooking, place in a casserole dish and add the potatoes. Next place the chicken pieces on top. Add the rest of the ingredients. Salt and pepper to taste. Bake covered for 45 minutes in a preheated 375 degrees Fahrenheit oven. Then bake an additional 15 minutes uncovered to brown. Serve over rice.

This Mexican chicken recipe can also be made in a slow cooker. Make layers the same as above. Cook on high for about 6 hours.
