Teriyaki Pork Loin (author unknown)

My friend, Dawni, gave this recipe to me!  She fixed it for us one weekend, and I've made it myself several times since!

1/2 cup soy sauce

1/4 cup packed brown sugar

2 Tablespoons fresh ginger, finely chopped

2 garlic cloves, minced

12 oz apple juice concetrate

1 teaspoon ground white pepper

3-4 pound pork loin roast (best if not a "tenderloin")

(*Hint : You can buy fresh ginger in the produce section in a tube. You can keep it in the freezer in between uses!)

Mix all ingredients except the pork. Pour 1/2 of the mixture in a crock pot. Put the pork loin on top of liquid and pour remaining liquid over the top. Cook on low for approximately 6 hours.

My family loves this served over a bed of white rice, along with a dinner salad!

I have that same problem at times. The key is to not cook it too fast and then also not overcook it. I have a crockpot that has settings from 1-5, and when it says cook on low I usually set it on the 2 and it will take about 6 hours for it to get to what I call the "pull apart" stage.

I'll have to give these recipes a try. I've always had a problem cooking pork. It tends to come out too dry.
