Pumpkin Spice Cookies
My grandma loves making cookies for every occasion and season. Christmas has its own cookie recipes, and so does Easter. These pumpkin spice cookies are crunchy, and a great mix with the chewy zucchini cookies for a Halloween or Thanksgiving dessert tray. I sometimes give these out to friends and coworkers, packaged in cellophane and tied with orange and black ribbon.
Note: There is no pumpkin in these cookies. The taste is from using pumpkin spices.
Ingredients
1/2 cup shortening
1 cup white sugar
1 egg, well beaten
1 1/2 cups sifted flour
1/2 teaspoon soda
1 tablespoon pumpkin pie spices
Directions
Work shortening & sugar until fluffy. Add beaten egg. Sift flour & soda together & add spices. Roll in balls, and flatten with glass dipped in sugar. Bake about 10 minutes in 375° F oven.
