Quick recipe: pasta with chilli, garlic, lime and rocket

This is one of my all time favourite pasta dishes and easy to throw together. It is inexpensive, quick and simple and tastes even better as leftovers the next day.
Ingredients (serves 2)
- wholemeal spaghetti (a good handful)
- 1 small red chilli pepper, chopped and deseeded
- 2+ large cloves of garlic (depends how garlicky you want to go), finely chopped
- 1 lime
- fresh rocket leaves (a good handful)
- parmesan cheese, grated or thinly-sliced (as much as you can handle)
- enough good olive oil to cover the chopped garlic and chilli
I feel hungry now.
Method
Boil a pan of water and cook spaghetti as usual or per packet instructions.
While the spaghetti is cooking:
Put olive oil in a small saucepan and heat very gently.
Add chopped chilli and garlic.
Keep this on the lowest heat possible for no more than a few minutes. DO NOT let the garlic go brown or burn.
Grate the zest of the lime (as much as zest as you can manage) and add to the pan.
Squeeze as much juice as you can from the lime and then add to the pan.
Let all of this simmer gently for a couple of minutes or until it starts to bubble.
Your pasta should be cooked by now. Drain pasta and put back into its pan.
Add the concoction of oil, chilli, garlic and lime to the pasta and mix thorougly.
Get your handfull of rocket and throw it in too and stir it into the pasta. I prefer to tear up the rocket a little first.
Serve in a pasta bowl with loads of grated/sliced parmesan cheese on top (or mix it in).
It looks so simple and basic but it tastes like heaven and can be on your plate in the time it took to boil up the pasta. I hope you enjoy this quick dish as much as I do. It's my favourite fast food.

Thanks so much SimeyC. Well, it is just as good with your average pasta and I have been known to throw in a knob of butter for devilment. I really want to cook this now.

This does sound good and is very simple - I'm not sure about the whole grain spahetti though - sounds way to healthy for me!!! *grin*
