What Is Hummus?
Hummus is a dip made mainly from chickpeas or garbanzo beans. Garbanzo beans and chickpeas are the same thing. What they are called depends on the region. Hummus is an ancient recipe dating back thousands of years. Hummus is a common dish in Greece and Middle Eastern countries.
There are many varieties of hummus, and hummus recipes are very different in various regions. About the only thing many hummus recipes have in common is the main ingredient, chickpeas. Hummus is usually served as a dip with pita bread or fresh, cut up vegetables such as onion slices.In Search of a Recipe for Hummus
The following is a basic, authentic hummus recipe. I got this recipe for hummus from a neighbor from Turkey when I was trying to learn how to make hummus.
She said that for it to be a truly authentic hummus recipe, canned chickpeas should not be used. And she doesn't add the garlic. But she said that she had 'Americanized' it somewhat. Anyway, it is very easy to learn how to make hummus with this recipe for hummus and it tastes great.
Hummus Ingredients
2 15-oz cans chickpeas, reserve 1/2 cup of the liquid to add to the hummus
1 teaspoon cumin1/4 teaspoon paprikasalt and pepper to taste 3 cloves garlic, chopped fine1/2 cup extra virgin olive oilJuice from 2 lemons (your preference, you may use less)2/3 cup tahiniHow to Make Hummus
Drain the chickpeas and remember to save 1/2 cup of the liquid. Mash in a blender or with a hand masher. Add the spices and garlic next. Next add the olive oil a little at a time while stirring well. Last, add the lemon juice and tahini. Add enough of the reserved liquid from the chickpeas to get a creamy consistency, as hummus should be.
Drizzle with a little olive oil just before serving. Serve with pita bread, fresh vegetables or just eat the hummus by itself!Hummus Recipe Information
Note: Tahini is a paste made from sesame seeds. It used to be very difficult to find, but is being carried by more stores now. Look for it in the ethnic foods section of your grocery store. If you can't find it there, try health food stores or stores like Publix or Wild Oats.

My brother-in-law is from Lebanon so I get my fill of hummus which I just love. However I cheat because I found canned chickpeas already made into a paste. As a matter of fact I think I will make some right now for my lunch.
