Shortbread biscuits
These shortbread biscuits are very easy to make. Preparation time is about fifteen minutes and cooking time about ten minutes.
For these shortbread biscuits you will need:
175g plain flour,
50g caster sugar,
110 g soft butter,
the zest of a lemon.
mix the flour and sugar together and grate the zest of a lemon into it. At this point you could use ground ginger, or chocolate chips, or cinammon.
Add the soft butter in cubes and rub it into the mixture. Form the dough by squashing and forming with your hands. Do not add any water or other liquid. When the dough comes together roll it out on a floured surface and cut into shapes.
Preheat the oven to gas mark 5, 190C or 375F and bake for ten to twelve minutes, on parchment paper, or on a non-stick tray. You can make them as thick or as thin as you like.

Almond Brittle
For this delicious treat you'll need
150g almonds,
200g caster sugar
100ml water, 100g butter,
125g dark chocolate.
Put the almonds on a baking tray and roast them in the oven for 3 or 4 minutes to toast.
Put the sugar, butter and water in a pan and stir it over a low heat. The butter will melt and the sugar will dissolve. Bring to the boil,then boil uncovered for 5 minutes or until the toffee is brown and bubbling.
Take it off the heat and add the almonds. Stir gently to distribute the almonds. Spoon little heaps of it on to paper on a baking tray and flatten them down a little. If the toffee gets too hard, put it back on the heat for a few minutes to soften.
Melt the chocolate in a bowl over some simmering water, making sure the bottom of the bowl doesn't touch the water. Drizzle the chocolate over the brittles and cool in the refrigerator.
