Spicy Pork
For this recipe of spicy pork I used pork shoulder which cooks down into a succulent, juicy, gorgeous state.
I marinaded the pork with a mixture of spices, salt, pepper, sugar and oil and let it steep in this, in the refrigerator, for four hours.
First I cut slashes in the pork and rubbed salt into them and all over the skin.
Then I dusted it with ground black pepper and sprinkled sugar over it.
The ingredients I used to coat the spicy pork were :
1 teaspoon of mixed spice
1 teaspoon of cumin
1 of turmeric
1 of dried coriander
1 of chilli sauce

The spices were mixed together with about 50mls of vegetable oil and spread over the pork. Then I sliced a large onion into thick discs and placed them in the bottom of the oven tray.
When the pork came out of the fridge I rested it on top of the onion slices.Then I chopped a few cloves of garlic and threw them into the pan with some sliced black pudding and a sliced chorizo sausage.I poured water over the meat so that It came up to about the level of the onions .I put the oven on full heat and let it heat up. Then I covered the tray with tin foil and put it in the centre of the oven.

After half an hour I reduced the gas down to mark 2 or 90C and let it cook slowly for 4 hours.
It was absolutely delicious and the meat fell apart. I can thoroughly recommend this recipe for spicy pork.
