Stuffed Peppers


Quick and Easy

Stuffed Peppers have to be one of the easiest meals to make. Whether you bake them in the oven or in your crockpot they are a great family meal that can be served alone, with rice, with pasta or simply with fresh baked bread.

You need:

8 Peppers - cleaned and tops removed

2 lbs ground beef

1 cup white rice (not minute rice)

1 large onion

salt, pepper to taste

1 tbsp italian seasoning

1 can tomato paste

2 lg can crushed tomato (24 oz each)

Shredded cheese (if desired)

Prepare:

When you cut the tops off the peppers dice the pepper that remains around the edges and combine with hamburg in a large bowl. Add seasonings, oinion, rice and tomato paste and stir until extremely well mixed.

Stuff peppers with meat mixture - packing full (remember this mix will shrink) and place in baking dish or crockpot.

Cover with crushed tomatos (add additional italian seasoning and garlic if desired to tomato first)

Bake in a 400 degree oven for 40 minutes and then top with cheese and put back in oven until the cheese is melted and bubbly

If cooking in crockpot you can put the crockpot on low for 8 hours or on high for 4-5 hours (depending on size of pot).

Serve with rice, pasta or bread as desired.

Freeze leftovers and heat in microwave on low heat for approximately 7-10 minutes (from frozen state) to serve a 2nd time.

Makes 8 stuffed peppers.

I have never been a fan of these hot things, but I already am starting to like them due to their health benefits. And I feel good because of it, added to constant exercies.
