The Black Eyed Pea is a sub species of the cow-pea grown around the world for its edible bean which is called the Black Eyed Pea. The most popular variety of Black Eyed Peas is the California Black Eyed Pea. It is the most common commercial variety of Black Eyed Peas grown.

Originally native to Africa the Black Eyed Pea first spread to Asia and from there to the West Indies and then to the southern United States around 1600. Eventually it became the most popular bean in Texas.

And that's where Texas Caviar came to be. Texas Caviar is served still today in the governors mansion in Austin.

Black Eyed Peas became associated with New Years Day and is served as part of a New Years Day Celebration. Eating Black Eyed Peas is thought in the southern USA to bring about prosperity. Black Eyed Peas are usually cooked with ham hocks and served with hot pepper vinegar.

Texas Caviar Recipe

Texas Caviar is a traditional dish made in Texas and other deep south states and while there are many different versions of this delicious recipe I think I have the best recipe ever for Texas Caviar. While in El Paso Texas I was served a similar dish and I improved on it and here it is for everyone to make, try , and enjoy.

For Your Recipe You Will Need.

1. 1 Pound Hot Pork Sausage cooked drained and chopped up very well.

2. 1 Cup Of Purple Sweet Onion chopped fine.

3. 2 Cups Fresh Frozen Whole Kernel Corn thawed.

4. 1 Cup Red Bell Pepper diced fine.

5. 1 Cup Green Bell Pepper diced fine.

6. 1 Cup Celery diced fine.

7. 2 Cups Cooked White Rice.

8. 2 Tablespoons Minced Fresh Garlic.

9. 1 Tablespoon Salt.

10. 1 Tablespoon Black Pepper.

11. 1 Tablespoon Ground Cayenne Pepper.

12. 2 Large Cans Black Eyed Peas washed and drained well.

13. 1 Tablespoon Fresh Chopped Parsley.

14. 1/4 Cup Italian Dressing.

Fry your hot pork sausage and drain very well. You want your pork sausage crumbled up very fine. Mix all the rest of your ingredients including your crumbled pork sausage in a large mixing bowl and mix very well.

Yes this recipe is really that easy and it is so delicious. You need to place your finished product into a plastic container with a tight fitting lid. And here's the hard part. Refrigerate your Texas Caviar for a full 24 hours before you sample it.
