Texas Caviar

This is so good. Serve with tortilla chips.
4 cups black-eyed peas, cooked
1 cup celery, finely slice
1/4 cup red bell peppers
4 oz. green chiles, chopped
1/2 cup purple onion, chopped
2 cloves of garlic, finely minced
1 teaspoon of sea salt (optional)
1/2 teaspoon black peper
1 1/2 cups of italian dressing, or enough to cover peas(Recipe on this page)
Combine black-eyed peas with remaining ingredients. Chill for 24 hours. Drain of excess salad dressing, and serve with tortilla chips.
Curry Crab Salad

This is a great salad.
2 cups lump crab
1 cup of cooked brown rice or millet
2 teasppons of curry powder
3/4 cup of mayonnaise (recipe on this page)
1/4 cup of mock sour cream (recipe below)
2 hard boiled eggs (chopped)
1/4 teaspoon of sea salt (optional)
3 drops of lemon juice
1 tablespoon of chives, minced
Toss crab and rice together. Mix together mayonnaise, sour cream and curry powder and blend well. Stir into crab mixture.. Mix eggs, lemon juice, salt and chives. Mix with the crab mixture. May be serve on lettuce leaves. To dress the salad up, garnish a sprinkle of curry and a parsley leave.

These is a great substitue for sour cream.

2 tablespoons of nut milk of your choice
1 tablespoon of lemon juice
1 cup of raw cottage cheese
Combine all ingredients in a blender or food proccessor and blend until smooth and creamy. Makes 1 cup.

1 cup macadamia nuts
½ cup water
1 teaspoon olive oil
1 teaspoon golden flax seed, ground
¼ teaspoon sea salt (optional)
2 cloves garlic
1 tablespoon lemon juice
Blend all ingredients in a blender in food process or until smooth and blended.
Radish Butter

This special butter. Use in recipes that call for the clarified butter to kick it up a notch.
1/2 cup of clarified butter (recipe on this page)
1/2 cup of radishes, sliced
1 teaspoon of lemon juice
In a food processor, cream butter, Add radishes and lemon juice. Using the pulsing action, mix to desired consistency.
Mock Smoked Eggplant
Mock Smoked Eggplant
This is truly a great recipe. Who would ever guess eggplant could taste soo good!
1 large eggplant (about 1 1/2 pounds)
4-5 tablespoons of olive oil
1 cup minced onion
1 peice of fresh ginger (1x2 inch piece) peeled and grated or minced
1 cup of ripe tomatoes, peeled and chopped
1 1/2 teaspoons ground cumin
1/8 to 1/4 teaspoon of cayenne (to taste)
3/4 teaspoon of sea salt (optional)
2-3 tablespoons of cilantro, chopped
Preheat oven to 450 degress. Slice eggplant in half lenthwise, score the face of each half with a knife and brush with a bit of olive oil. Cook 40 to 50 minutes umtil black and soft. Let eggplant coll. Scrap out the flesh and chop coarsely.
In a skillet, add olive oil. Over medium heat, saute onions until they began to brown. Then add the ginger and cook and stir for 1 minute. Add the tomatoes. Cook, stirring frequently for 3 to 5 minutes until liquid is slightly reduces. Add the cumin, cayenne, and salt, stir. Then add tje eggplant. Reduce heat tp medium and cook for 10-15 minutes. Stir in cilantro and serve.

Miss your breads, try this one. It taste like whole grain bread sliced very thin. Works great for a snack, works great with the crab salad or use to dip in olive oil with your favorite seasonings. Another idea is to use inplace of breads. Wrap it around a small peeled cucumber. Use your imagination on this one.
2 cups of vegatable pulp, carrots, beets, use your imagination
1/4 cup ground sunflower seeds (no shell)
pinch of sea salt (optional)
pinch of pepper
1/2 teaspoon of flax oil
1 tablespoon of mexican seasoning
5 leaves of basil, shredded
8 cherry tomatoes
Mix vegy pulp, ground sunflower, flax oil. Mix in the salt and pepper. Spread mixture on a dehydrator sheet or an cookie sheet lined with aluminium foil. Sprinkle with the seasonings, or use your own mixture of choice. Sprinkle the basil over the bread. Half the cherry tomatoes and squirt the seeds randonly around the bread. Then place the skins here and there. Place in your dehydrator and watch for desired doneness. Or you may place in your oven for roughly 14-16 hours at 50-60 degrees. Keep on eye on the bread in either cooking method. Enjoy.
