An Egg-stremely Large Dilemma

Have the festivities of Easter left your egg-sasperated? Finally, that nasty Easter grass is gone from being scattered all over your house, and your family has digested about all the chocolate bunnies and hard boiled eggs they can stomach, not to mention the "Peeps", the amazing marshmallow invention. Now the dilemma, what to do with all those left over hard boiled eggs?

Here are two recipes that can show you egg-sactly what to do.

Good Eggs


This recipe was given to my mother many years ago by a close family friend Berneice Peterson, thus the creative name was given, “Berneice’s Stuffed Rolls.”

Ingredients:

3 dozen small French Rolls (3-4 inch size)

1 pound Velveeta Cheese- diced

3 hard boiled eggs- peeled and diced

4 green onions- chopped up finely

4 ounce can of Ortega diced green chiles

4 ounce can of minced black olives

Dash of salt

½ cup vegetable oil

Mix all the ingredients together (except the rolls). Take the rolls and cut them in half and take out a center portion of each side about the size of a walnut. Place a heaping teaspoon of the mixture into the hole you made in the roll, put the roll back together, and wrap in aluminum foil. Heat the oven to 350 degrees and cook the little sandwiches for 15-25 minutes or until the cheese is melted inside.

Now, I know they might sound a little nasty by just reading the ingredients, but believe me they are awesome.


Bonus: Some Egg-stra Trivia About Eggs

  • To tell if an egg is raw or hard-cooked, spin it! If the egg spins easily, it is hard-cooked but if it wobbles, it is raw.

  • Egg yolks are one of the few foods that naturally contain Vitamin D.

  • White shelled eggs are produced by hens with white feathers and ear lobes. Brown shelled eggs are produced by hens with red feathers and red ear lobes.

  • Eggs age more in one day at room temperature than in one week in the refrigerator.

  • The egg shell may have as many as 17,000 tiny pores over its surface. Through them, the egg can absorb flavors and odors. Storing them in their cartons helps keep them fresh.

  • If an egg is accidentally dropped on the floor, sprinkle it heavily with salt for easy clean up.


Your diet may need an egg-stensive make-over.

If you are like my family, Easter may have brought on a high intake of Carbs., so a little more balanced diet, may be welcomed as well as needed after the holiday. It is a perfect time to add some needed greens, so a nice salad at this point may just sound egg-straordinary, even for the kids.

Classic Seven Layer Salad

Layer in order of list of ingredients in a 9x13 pan the following:

1 head of lettuce, separated and layered into pan

1 stock of celery chopped finely

1 bunch of green onions, chopped finely

1 can of water chestnuts, chopped

1 package of frozen "petite" peas

6 hard boiled eggs, mashed

Dressing- 1 cup mayonnaise mixed with 1 tablespoon "Lawrys" Seasonal Salt- spread on top of all the other layers. Then sprinkle Parmesan Cheese over the top. Some people like to add bacon bits, but that would make it eight layers now wouldn't it?

Did you know if you have a hot egg to make it easier to peel you run cold water over it....and if you have a egg that is cold (from refrigeration) you run Hot water over it. It loosens the membraine between the shell and the egg white.. Also that egg-allergies are from the whites??? G-Ma :o) hugs and HOPPY EASTER
