Zucchini Drop Cookies
In my father's side of the family, every season has its own "taste". This recipe is one of my favorites for fall. My grandma makes these and also pumpkin cookies every year, starting the end of September. It's a great way to use up the extra zucchini in your garden, or any that you've been "gifted" with from friends. I even package these up in cellophane and tie them with orange and black ribbon for Halloween gifts to friends and coworkers, or label them and give them to trick-or-treaters I know.
Ingredients
1 cup grated zucchini
3/4 cup brown sugar
1/2 cup margarine
1 egg, beaten
2 scant cups flour
1/2 teaspoon each cinnamon and cloves
1 teaspoon salt
1 teaspoon soda
1 teaspoon vanilla
1 cup nuts
1 cup raisins
Directions
Mix all ingredients together thoroughly. Drop by spoonful on greased cookie sheet. Bake at 320° F - 325° F for 10-15 minutes.
