Dutch Baby baked apple pancakes


Mornings at my bed and breakfast are a food worshipper's dream. You awake to the aroma of freshly ground and brewed coffee. We use only the finest European blend, with a dash of French roast thrown in. We may be baking muffins, waffles, french toast, or Dutch Baby apple pancakes. All four are favorites with my guests, but they especially like the baked apple pancakes.

These pancakes are very special. They are not baked on a griddle, they're baked inside the oven at 400 degrees, so they puff up and look so appetizing. For the apples, we usually use Granny Smith. We`saute them in butter, then add cinnamon and sugar. The recipe follows:

Dutch Baby Baked Apple Pancakes with Glazed Granny Smith Apples

Ingredients:

4 eggs, 1 cup flour, 1 cup milk, 1 stick butter, 3-4 Granny Smith Apples, 2/4 cups brown sugar, generous sprinkle of cinnamon

Instructions:

Batter: Pre-heat oven to 400 degrees. Process first three ingredients together in a blender. In a large 3-4 quart wrought iron frying pan, melt half of the butter. Pour batter into frying pan and set in oven immediately. Bake for 25 minutes or until lightly browned. While pancake is baking, make glazed apples.

Glazed apples: Peel apples, core and slice as you would for an apple pie. Melt other half of the stick of butter in a saute pan and add apples. Saute apples for two minutes. Add cinnamon and sugar. Continue sauteing until just tender.

When pancake is done, remove from oven and slide onto large serving or dinner plate. Sprinkle generously with powdered sugar. Top with glazed apples. Serve with maple syrup, sausage patties and steaming cups of coffee or ice cold glasses of milk. Yummm.

Variations: any kind of fruit can be used. If preferred, use no fruit and just speinkle with lemon juice and powdered sugar. Can also use jam (expecially Lingenberry) or honey.

Every time I make them for my guests, I make one for myself. They are so good. Good to eat, but not good for the diet. Thanks for the comment.

I don't know which sounds better: the grand marnier french toast, or the baked apple pancakes - might have to stay 2 days and try both. To heck with a diet! :)
