Carrot Cake With Cream Cheese Frosting

The First Carrot Cake Recipe

The first time I heard of carrot cake I was about 11 years old. My mom had sampled a carrot cake recipe and decided she wanted to make a carrot cake herself. I thought she was crazy. A cake with carrots? It sounded so unappetizing to me. But when Mom finished frosting her carrot cake, I was brave enough to try her carrot cake recipe. And I was amazed. I have been hooked on carrot cake ever since. I don't know who the genius was that decided to add carrots to a cake recipe, but I thank them. The combination of carrots, spices, and sweetness is divine. Here is my contribution of my favorite carrot cake recipe. This carrot cake recipe produces a very moist cake.

Carrot Cake Recipe Ingredients

2 1/2 cups self-rising flour

1 teaspoon baking soda

1/4 teaspoon salt

1 1/2 teaspoons cinnamon

2 cups brown sugar

1 cup oil

4 eggs

3 cups grated carrots

2 teaspoons vanilla

1 cup chopped walnuts- Omit if you wish

Optional carrot cake ingredients- 1/4 cup coconut, 1/4 cup raisins

Carrot Cake Recipe Instructions

Mix first 5 ingredients. Add the oil next and mix again. Add the eggs one at a time, beating after adding each one. (It is important not to add the eggs all at once.) Add the last 3 carrot cake recipe ingredients and mix well.

Pour carrot cake batter into 2- 9 inch round cake pans that have been greased and floured. Bake in a preheated 350 degrees Fahrenheit oven for 45 minutes. Let cool. Frost your carrot cake with classic cream cheese frosting.

Classic Cream Cheese Frosting for a Carrot Cake Recipe

8 ounces cream cheese, softened

1/2 cup butter, softened

2 teaspoons vanilla

16 ounces confectioner's sugar (box)

Cream together the butter and cream cheese. Add the vanilla extract and confectioner's sugar. Mix until smooth and creamy. Frost the carrot cake. Enjoy!

Additional Carrot Cake Recipe Notes

This carrot cake recipe can also be made in a bundt pan. Or make carrot cupcakes. Just adjust the baking time accordingly. Test the carrot cake recipe with a toothpick if you're not sure. The carrot cake is done when the toothpick comes out clean after being inserted in the center of the cake.
