Creamy Corn Chowder Recipe
In most parts of the United States you can now purchase fresh corn on the cob throughout the year in most supermarkets. For this recipe you will want about 8-10 fresh years of corn on the cob. And yes the flavor is so much better when you use the corn just cut off the cob for this recipe.
You want to peel the husks off your fresh ears of corn and then remove the silks. You can use a kitchen brush to help get most of the corn silks off your ears of corn. Once you have your corn cleaned up use a sharp knife to cut the corn kernels off the corn cobs. Turn your knife blade sideways and scrape your corn cobs to get all the flavor of your corn into the pot of corn chowder.
For Your Corn Chowder You Will Need.
1. 4 Cups of Whole Kernel Corn which is about 8-10 ears of fresh corn on the cob.
2. 2 Tablespoons of Real Butter.
3. 1/2 Cup Finely Diced Green Onion including the onion tops.
4. 1/2 Cup Fine Diced Roasted Red Pepper ( Purchase in a jar at Supermarket )
5. 1/2 Cup Fine Diced Celery.
6. 4 Large Potatoes diced into real small 1 inch cubes.
7. 8 Cups of Chicken Broth.
8. 3 Cups of Whole Milk.
9. 1 Teaspoon Sea Salt.
10. 1 Teaspoon Black Pepper.
You will want crisp bacon crumbles and sour cream to garnish your finished bowls of corn chowder with.
No Low Fat Anything
In this creamy corn chowder we want all the rich delicious flavors so be sure to use real butter , whole milk and regular sour cream for your corn chowder. The flavors you will get will be oh so good in your creamy corn chowder and your family , guests and friends will think it is oh so delicious.
In a large skillet you want to place your real butter and melt it over medium heat. Add your bell pepper , green onions and celery and cook until your vegetables are tender. Now you will want to stir in the potatoes , the broth and two cups of your corn. Bring your mixture to a boil for 15 minute then reduce to a low simmer.
Puree the other two cups of corn in your food processor along with the whole milk until very smooth and then add to your pot. Add your salt and pepper and let it cook simmering for at least 30 minutes until your corn is done and the creamy corn chowder is thickened.
Serve your creamy corn chowder in bowls garnished with crisp crumbled bacon and sour cream. I guarantee you that people are going to just love this creamy corn chowder.
