The country's economy experienced a dramatic slowdown in 1997-98 due to the regional economic crisis, political infighting, and civil conflict. Tourism and foreign investment dropped precipitously during this time, but the economy began to recover at a 5.0% annual rate in 1999. Peace returned in 2000, and economic reforms began again. In 2001 and 2004, GDP growth grew to 6.3% and a record high of 1.05 million visitors. While Cambodia is still relatively poor in infrastructure, the tourist industry is one of its fastest-growing industries.
The main food staple is rice, and Cambodians also consume fish from the Mekong and Tonle Sap rivers. According to a recent report by the World Bank, the country consumed 20 kilograms of fish per capita in 2000. The population can eat only two ounces of fish daily, but that is increasing quickly. Aside from seafood, Cambodians also enjoy fruit, soups, noodles, and traditional boat racing. Several key ingredients used in these dishes are fish sauce, tamarind, oyster sauce, coconut milk, and black pepper. The rumpstews, called num banh chok, are local delicacies.
