Once I have an LLC, am I required to use it? Or may I continue to do some work as a sole...
You do not need to use your LLC however I would recommend it. Why go to the expense of setting up an LLC and not make use of its benefits? Operating as a sole proprietor will provide you with no liability limitation. Your personal assets will continue to be exposed to any liabilities your business might incur. One of the primary benefits of an LLC is limiting this type of liability and as an LLC requires following fewer formalities than a corporation, it should not be much trouble at all to start doing business under your LLC. A single member LLC really operates as a sole proprietorship - just make sure you use your LLCs name as you do business, enter into contracts and set up an LLC bank account, etc.
