1) Do you have to publish your writing for anyone else to see it?
2) What if I want to make another headline under my main topic? Can I do that or do I have to start a whole new hub?

You can leave hubs unpublished, though I'm not sure why you'd want to... you might as well just write in a word document if you don't want people to read it... but that's your call.
And you can put a subheading by using the text capsule heading, or highlighting the text you'd like to change and setting it from "Paragraph" to "Heading 2" or "Heading 3."
