How would you structure projects to give equal access to all pupil in your class room?

Are you referring to differentiating the project to meet all of your students' needs? If so, using a rubric is helpful. You can create separate rubrics (2 or 3) that fit the learning needs of your students. Make one for your high achieving students, one for your moderate students and one for your low students.
However, I've found that the more that I push my students to achieve greater things, the more that they rise to the occasion. Without more specifics about the project, it is hard to give more feedback. Good luck!
adding to what cardelean has said, I would suggest giving group projects. Try to have groups of mixed ability students and tell your students they will be marked as a group. Give each member a particular responsibility. This will ensure that everyone is working and also the high flyers will be pulling the low achievers as they would would not want to be penalised by poor quality of work. In that case, everyone will gain. You may also learn about group work/ cooperative learning on the web. Famous writers include Johnson and Johnson.
