What might happen to a foodservice operation if it didn't enforce issuing controls?
If you discard the controls surrounding food service in any way, you are jeopordizing the health and safety of those who consume, prepare and package the items. Enforcing issuing controls offers a level of confidence to the community at large; no one wants to eat something that has not been inspected or managed properly. In the absence of food controls, health conditions would spring "out of control," and the level of illnesses would become epic.
