Parmesan Crusted Pork Chops with Broccoli Casserole

Pork chops, parmesan cheese, garlic, oregano and basil, olive oil

Bag of frozen broccoli, 1 box of gluten free cream of mushroom soup, gluten free macaroni, mozzarella cheese.

Pork chops:

Brush chops with olive oil and broil to near done. Pull out and sprinkle top with garlic, oregano, basil and parmesan cheese. Return to broil until done.


Broccoli Casserole:

Place broccoli in water in a sauce pan to boil. Once boiling add macaroni. Cook 10 minuntes and then drain. Add cream of mushroom soup and bring to a boil. Add mozzarella cheese and stir constantly till melted. Serve and sprinkle with some parmesan.

Mint Chocolate Chip Ice Cream Cake

1 13x9 pan

Tin foil

2 pints gluten free mint chocolate chip ice cream

1 box of gluten free vanilla cookies

1 tub of whipped cream

1 chocolate bar

Lined the pan with tin foil. Pour out half the box of vanilla cookies into the pan and crush with the bottom of a glass. Spread evenly. Soften ice cream in microwave for 30 seconds. Spread on top of cookies. Spread some whipped cream over the ice cream. Use a shredder to chave some of the chocolate bar over the whipped cream. Place in freezer till hard. Ready to serve! 

Chicken, Ham, Potato Hash

 5-6 chicken tenderloins

Vegetable OIl

1 cup diced ham

6 potatos diced.

1 onion chopped

Garlic powder

Salt

Pepper

1 can mexican tomatos

Shredded cheese

Brown chicken in oil. Add ham, potatos and onions till browned. Sprinkle with garlic powder, salt and pepper. Add tomatos and simmer for a few minutes. Sprinkle with shredded cheese till melted.

Cheesy Chicken and Broccoli Rice

 1 lb. boneless chicken breasts cubed.

1 can (14.5) oz. can of chicken broth.

2 cups instant white rice.

1/2 lb. (8 oz.) Velveeta cheese

1 pkg. of frozen broccoli.

Brown chicken in vegetable oil in skillet. Drain off oil. Add chicken broth and bring to a boil. Turn down to medium heat. Add rice and broccoli. Cube cheese and add to mixture. Cook for 10 mins. or until broccoli/rice is done and cheese is melted.

Gluten Free Tex Mex Potato Hash

 1 lb. of hamburger

Onion

Red pepper

Taco Seasoning

Hash browns

Shredded Cheese

1 can of corn

Brown hamburger, onions and red pepper. Add taco seasoning and simmer for 4 mins. Preheat oven to 400 degrees Fahrenheit. Line 9x13 baking dish with hash browns. Add hamburger mixture, 1/2 cup water and 1 can of drained corn. Mix well. Cover with shredded cheese and bake for 40 mins. Great served with salsa and tortilla chips.

Gluten Free Beef Stew

 Beef

Fresh or canned carrots.

4-5 medium sized potatos, peeled and diced or sliced.

3/4 cup Mashed potato granules.

2 tablespoons Butter or margarine

2 cups Milk

1 can of peas.

Garlic powder.

Salt

Pepper

1/2 can tomato juice.

10 cups water.

Place water in pot. Dice meat, carrots and potatos and add to water. Drain peas and add to pot. Add salt, pepper and garlic powder to taste. Add tomato juice, milk and butter. Bring to a boil and turn down to medium heat. Add mashed potato granules and stir well to use as a thickener. May need to add more depending on how thick you would like your stew. Cook till meat is done and tender. 2-3 hours.

 

Gluten Free Cheesy Hashbrown Casserole

 1 can chicken broth

1 small container of sour cream

Garlic

Onion powder

Basil

Salt

Pepper

Shredded cheese

Hashbrowns

Butter

Preheat over to 350 degrees Fahrenheit. Line a casserole dish with hashbrowns. Mix half of the can of chicken broth, sour cream and shredded cheese together. Add garlic, onion powder, basil, salt and pepper to taste. Pour evenly over hashbrowns. Cover with more hashbrowns. Cover top with shredded cheese. Dot with butter across the top. Bake for one hour or till golden brown.

Gluten Free Cinnamon Rolls in a Jif

 Take some Ian's or Van's french toast sticks. Microwave them as specified. Spinkle with cinnamon sugar and top with the frosting I listed below for the donuts. Awesome stuff and ready in a jif.

Gluten Free Zucchini Bread

 Nonstick cooking spray.

2 eggs

1 cup sugar

1 grate, unpeeled zucchini

1/2 cup corn oil

11/2 teaspoon vanilla

1 tablespoon mayonaise

11/2 teaspoon cinnamon

11/2 cup gluten free flour mixture

1/4 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

1/2 cup chopped walnuts

Preheat oven to 325 degrees Fahrenheit. Mix wet ingredients together. Mix dry ingredients together. Blend together both mixtures. Place in greased pan. Bake for 55 minutes. Let cool and slice.

Glaze for Gluten Free Donuts

 1/4 cup milk

1 teaspoon Vanilla

2 cups confectioner's sugar

Mix all ingredients well and dip donuts in mixture.

Great Gluten Free Tuna Salad

2 cans of tuna drained.

Dill weed

Garlic

Mayonnaise

Gluten Free crackers

Relish

Combine all ingredients together, adding enough of each to flavor or to make the salad fluid enough for sandwich spread. Serve on toasted bread. Bon appetit!

Gluten Free Hamburgers

1 lb. hamburger

1 lb. sausage

2 eggs

Ranch dressing

Mix together and cook in the broiler or on the grill.

Home Fries

 Great side dish that is gluten free that my daughter loves. Simply wash and peel two potatos. Dice and then cook in skillet with the bottom covered with heated vegetable oil. For added zest you can sprinkle your potatos with flavorings of your choice from red pepper to garlic or onion powder.

Gluten Free Sweet and Sour Pork or Chicken

 1 lb. of dice, cooked pork or chicken.

Rice, cooked, enough for 4-6 servings.

1 can of pineapple in juice.

2 tablespoons sugar

1 cup water

Garlic

1/2 cup apple cider vinegar

Ginger

Onion

Corn Starch

Cook rice, place on serving plates. You can coat your pork or chicken in gluten free flour and deep fry, but I prefer it uncoated. Mix all the ingredients above with the pork. Cook till done and serve on the rice.

Strawberry Smoothies

 1 cup strawberries

12 oz. frozen lemonade concentrate.

2 cups milk

1 cup frozen vanilla yogurt

Mix together in blender and serve.

yield= 4 smoothies

Gluten Free Hot Tamale Pie

 11/2 lbs. hamburger

1 cup vegetable oil

2 med. onions chopped

1 can of tomatos

2 tablespoons chili powder

1 tablespoon salt

1/2 teaspoon red pepper

1 cup mango

1 can corn

1 cup milk

2 cups gluten free corn meal

3 eggs well beaten

Cook hamburger, oil and onion together until done. Add tomatos, chili powder, salt, red pepper,and mango. Cook till tender. Add the corn, milk, corn meal and eggs. Bake at 350 degrees Fahrenheit for 45 minutes. Can top with shredded cheese 10 minutes before done for added flavor.

Gluten Free Travel Bread

 1/2 cup of potatos mashed or instant potatos.

3 teaspoons baking powder

1/2 cup butter or margarine

1 teaspoon baking soda

1/4 cup sugar

1 teaspoon cream of tartar

6 eggs separated.

1/2 teaspoon salt

2 cups gluten free flour of choice

3/4 cup milk.

Heat potatos and mash or make mashed potatos. Cream potatos with butter and sugar. Add egg yolks and beat well. Add dry ingredients with milk to the mixture and mix well. Beat egg whites to a soft peak and blend into main mixture. Pour into a greased bread pan and bake at 350 degrees Fahrenheit for one hour.

Bread Machines and Other Equipment

 If you are new to Celiac Disease, you will find out quickly the necessity of kitchen equipment. Not just extra utensils, but a separate toaster too. I found a coffee grinder was useful too to grind rice for flour to save money. But in addition, buying your own bread machine will not only save you money, but is great for your palate. You can make the most delicious gluten free bread!

Let me recommend the Breadman Ultimate Plus. It has thousands of settings and you can make bread, bagels, and pasta in it. It has a door for fruit and nut addition to bread. It cost me $120 to order online from Wal-Mart and it has been worth every cent. My only recommendation is this though when making bread. It does have a gluten free bread setting, but I prefer this method when making my bread to get  a more perfect loaf. I use the dough only setting. Once it is done, I use a rubber spatula to remove the batter arm and smooth out the dough. then I place the machine on bake only. I get a perfect loaf every time without having to dig the batter arm out of my loaf at the end which makes my bread fall apart. My slices are more uniform throughout the loaf.

Gluten Free English Muffins

 1/3 cup warm water

1/8 teaspoon ginger

1/8 teaspoon nutmeg

1 teaspoon sugar

1 tablespoon yeast

1 cup warm water

3 tablespoons honey

31/2 cups gluten free flour of choice

11/2 teaspoon salt

1/2 teaspoon Xanthan gum

6 tablespoons vegetable oil

1/4 cup milk

Preheat oven to 350 degrees Fahrenheit. Grease a muffin pan. Combine ginger, nutmeg, yeast and 1/3 cup warm water and proof for 10 minutes. Combine yeast mixture, 1 cup warm water, honey,vegetable oil, salt and gluten free flour. Fill muffin tins. Cover and let rise for 30 minutes. Brush with milk. Bake for 25 minutes or until golden brown.

Gluten Free Navy Bean and Pea Crock Pot Soup

 One bag of navy beans.

One bag of dried peas. 8 cups of water.

2 dollops of margarine or butter.

One onion chopped.

Salt

Pepper

Garlic

Basil

Place all in crock pot and cook till done. Delicious with gluten free corn bread!

Gluten Free Meatloaf

 2 lbs. of hamburger

1  lb. of sausage

2 eggs

1 onion

Ketchup

Gluten free bread crumbs or crackers.

salt

pepper

garlic

basil

Mix all ingredients together except ketchup. Add enough ketchup to make the mix stick together. Place in loaf pan. Cover top with ketchup. Place some honey on top too if desired. Bake at 350 degrees Fahrenheit for 11/2 hours.

Gluten Free Honey Cinnamon Graham Crackers

 yield: 24 crackers

3/4 cup gluten free flour mixture

1/4 cup coconut flour

1/2 teaspoon salt

1/2 teaspoon cinnamon

1 teaspoon baking powder

1/4 cup butter

2 tablespoons honey

1/3 cup brown sugar

1 teaspoon vanilla

1 tablespoon milk

nonstick cooking spray

1 teaspoon cinnamon sugar

Mix all ingredients together. Roll out and cut into squares. Place on cookie sheet sprayed with nonstick cooking spray. Bake at 325 degrees Fahrenheit for 11 minutes.

Gluten Free Beef and Egg Noodles

 A good sized pot roast or cut up beef tips.

Beef Broth

Milk

Celery

Onion

Mushrooms

Garlic

Salt

Pepper

Egg Noodles (see recipe below)

11/2 cups gluten free flour

3/4 cup corn starch

1/4 teaspoon salt

1/4 teaspoon baking powder

4 egg yolks

Thaw beef and boil till tender. Drain, add beef broth, garlic, onion chopped fine, salt, pepper, celery chopped fine, mushrooms, milk enough to make a creamy mixture. Bring to boil and let simmer for 1 hour. Make egg noodles and bring broth to a boil. Add egg noodles, turn to medium heat and cook for about 20 minutes or until done.

Sangria Coolers

 Here's a good summertime recipe in celebration of my birthday tomorrow. It might come in handy if my husband forgets it. LOL!

Sangria Wine

7-Up

Ice

Oranges

Mix sangria and 7-Up fifty fifty in a pitcher or a glass. Place in orange slices and serve over ice. Enjoy!

Gluten Free Spaghetti Bake

 Gluten free spaghetti noodles

Spaghetti Sauce

Mozzarella Cheese

Sausage

Boil noodles and drain. Preheat oven to 400 degrees Fahrenheit. Place noodles in baking dish, top with cooked sausage, spaghetti sauce and cheese. Bake till cheese is melted. Top with parmesan cheese.

Gluten Free Vegetable Soup

 1 box beef/chicken or vegetable broth. Your choice.

2 cans od mixed vegatables drained or you can chop up fresh vegetables of your choice. Finely chopped cabbage added makes an extra flavor.

1 can of tomato juice

garlic powder

onion powder

salt

pepper

basil

Mix all ingredients together and bring to a boil. Simmer until vegetables are tender. Add spices to taste as it simmers. Now it is ready to serve or freeze for future use.

What to do for the gluten free birthday

 Many people have kids who look forward to picking out their birthday cakes like my 5 year old. When you find out that they have Celiac Disease, that process gets creative. But do not despair, there are businesses that come to the rescue. You can check your local specialty cake stores to see if they will make you a gluten free birthday cake decorated with their favorite theme. Better yet, you can get all ice cream cake with icing that is gluten free at your local Dairy Queen. And Cold Stone Creamery will do the same. And they still get to pick out their favorite character theme for their cakes. So , in my opinion, birthdays just got better! More ice cream and just the frosting. Yum!

Another Great Gluten Free Chicken Nugget or Breaded Chicken Recipe

 Corn Meal

Salt

Pepper

Garlic

Onion Powder

Basil

Ginger

Enough water to make a paste.

Cook your chicken strips or chicken briefly in the microwave. Coat chicken and then deep fry till done. My children loved this recipe.

Gluten Free Tomato Soup

 1 can tomato juice

Some thinly sliced celery or celery seeds.

Some onions sliced or onion powder

Salt and pepper to taste.

Mix together, bring to a simmer, then enjoy or freeze for future use. Great with gluten free macaroni in it and a little margarine.

 

Gluten Free Corn Chip Chicken

 1 bag of corn chips

1/4 teaspoon pepper

1 teaspoon paprika

1/4 teaspoon garlic powder

1/2 teaspoon taco seasoning

4 tablespoons melted butter

5 chicken legs

Place butter in baking dish. Mix dry ingredients together, crunching corn chips. Rinse chicken legs and roll in dry mix. Place in baking dish with butter. Bake at 375 degrees Fahrenheit for 30 mins. Turn and bake for another 30 mins. Can substitute regular potato chips for the corn chips for a change of pace.

 Gluten Free Cream of Mushroom Soup

Yield= 2 cans of condensed cream of mushroom soup.

16 oz. of canned or fresh mushrooms.

1 teaspoon olive oil

4 tablespoons butter or margarine

1/2 cup gluten free flour

2 cups chicken or vegetable stock

11/2 cups light cream

Squirt of lemon jiuce

Pepper to taste.

Pinch of nutmeg.

Pinch of garlic.

Pinch of onion powder.

Saute mushrooms if fresh. Melt butter. Add flour to butter while whisking.Allow roux to cook for a few minutes while whisking. Add stock to roux. Add cream. Simmer for one minute. Add mushrooms and spices. Cook for a few minutes. Ready to serve or you can place in canning jars to freeze and use as needed.

If you are like me, I was a lazy crock pot cooker, using Campbell's Cream of Mushroom soup for my stock in my pot roast. Now that we are going gluten free for my daughter's celiac, we have ot be more creative. Below is my awesome stock recipe for pot roast.

Add pot roast. Place in potatoes and carrots. Pour one box of beef broth. Add milk or heavy cream. Take one cup cold water and add 8 teaspoons corn starch. Mix well and add to crock pot. Add garlic, onion powder, salt, pepper and basil to taste and let cook till tender. Enjoy!

If you are like me, money is tight. So paying $6.00 for a one pound bag of gluten free flour is ridiculous, right? If it isn't bad enough to have celiac disease or gluten sensitivity, you get gouged in the pocket book too. Below is my cost saving method for making your own rice flour and saving money too.

You can buy a huge bag of rice or a box of minute rice from Sam's Club for about $7.00. Get  a good coffee grinder to dedicate just to making flour. Place the rice in the grinder and grind to a very fine powder. Put in a tupperware container to keep fresh. I added a one poung bag of soy flour and some flaxseed to my homemade rice flour. Keep in the freezer to keep fresh. It made a great loaf of bread.

Grilled chicken strips (like for salads)

Corn Flakes

Onion powder

Garlic powder

Basil

Corn Starch

Milk

Cook chicken strips in microwave per package instructions and cut up into 1 inch strips. Heat vegetable oil in saucepan.Ground desired amount of corn flakes in a bowl. Mix some corn starch with milk in a separate bowl. Add inion powder, garlic powder and basil to corn flakes to desired taste and salt /pepper if desired. Add milk mixture to corn flake mixture and mix well. Add chicken to coat and place in hot oil till golden brown. Bon appetit!

Gluten Free Fettucine Alfredo

 If your family is like my family, they love pasta. Below is a good option for a lower fat version of fettucine alfredo that my family loves.

Gluten Free Fettucine Alfredo

Gluten Free Pasta of choice

2 blocks of cream cheese

Parmesan cheese

Margarine

Milk

Boil your pasta and set aside. Soften the cream cheese in the microwave. Place in saucepan. Sprinkle with Parmesan cheese as desired and separate with spoon into cream cheese. Add milk to desired level and add a dollop of margarine. Turn heat on medium and stir continuously until cream cheese is blended into sauce and it is not lumpy. Add milk to thin if needed. Serve sauce over pasta and Voila!

This recipe is also great if you add one can of creamed corn and place in your bread maker to make.

Nonstick cooking spray

1 cup cornmeal

1 cup gluten free flour of choice

1/3 cup brown sugar or 1/2 cup splenda with 1 tablespoon vanilla

1/2 cup sugar or splenda

2 teaspoons baking soda

1/2 teaspoon salt

2 eggs

11/4 cup milk or buttermilk

3/4 cup oil

1 tablespoon mayonnaise

1/2 teaspoon vanilla

Mix together and bake at 400 degrees Fahrenheit for 15 minutes.

Gluten Free Yeast Pizza Crust

 Gluten Free Yeast Pizza Crust

2 cups gluten free flour of choice.

1 pkg of yeast or 2 tablespoons.

2 teaspoons Xanthan gum.

1 teaspoon sugar

1 teaspoon salt.

2 tablespoons vegetable oil

11/3 cup very warm water (120 degrees Fahrenheit)

Makes a 13" pizza. Bake at 425 degrees Fahrenheit for 15 minutes. Mix yeast, water and sugar together and let yeast rise for 10 minutes. Add dry ingredients and let rise for 30 minutes. Place on a cookie/pizza sheet greased with olive oil and bake for 15 mins. Then place on toppings of choice. Bake until golden brown.

Yield 20-24 mini donuts.

1/2 cup milk

1 tablespoon sugar

2 tablespoons yeast

1/2 teaspoon salt

1 teaspoon sugar

3/4 teaspoon Xanthan gum

13/4 cup gluten free flour of choice

2 eggs

2 tablespoons potato or corn starch

2 tablespoons oil

Combine warmed milk, yeast and sugar in a small bowl. Should be 120 degrees Fahrenheit. Stir to mix well. Let yeast rise for 10 minutes. Combine all dry ingredients. Add eggs and oil and stir. Add yeast mixture and stir. Let rise for 30 minutes. Arrange on cookie sheet and bake at 350 degrees Fahrenheit and bake for 3 mins. or until desired.

For those of you who are diabetic also, a great glaze and mixing Splenda, milk and a touch of vanilla to glaze your donuts or simply dip them. Delicious!

 

Gluten Free Waffle Recipe

 Here is a great recipe for gluten free waffles which I am sure will become a staple in anyone's house who has children. They also freeze great and just pop in the microwave to warm up.

Gluten Free Waffles

1 cup gluten free flour of choice

1/2 teaspoon Xanthan gum

3 teaspoons sugar

1/2 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon baking powder

vanilla to liking

cinnamon to liking

nutmeg to liking

and I like to add a little honey to the batter.

3 eggs

A dollop of butter or margarine

2 cups buttermilk or regular milk

Beat 3 eggs. Add melted butter and milk. Mix wet and dry ingredients together until smooth. Cook in waffle iron.

 

 

Gluten Free Cracker Recipe

 Here is a gluten free cracker recipe that my five year old loves!

 

Gluten Free Crackers

3/4 cup gluten free flour of choice

1/2 cup corn starch

1/4 cup almond meal or flaxseed meal

1 teaspoon cream of tartar

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper

6 tablespoons olive oil

6 tablespoons buttermilk

1 cup grated cheese (optional)

1 tablespoon garlic powder

Preheat oven to 350 degrees Fahrenheit. Combine all dry ingredients and mix well. Add olive oil and buttermilk till it forms a ball. If too crumbly, add more milk till a ball forms. Divide dough in half, sprinkle with flour and roll out thin. Cut into circles with a biscuit cutter or cut into squares with a pizza cutter. Bake on ungreased baking sheet for 15 mins. or until desired crispness.

Yield: 701/2 round crackers.

 

Great Gluten Free Bread Recipe

I wanted to share this great gluten free bread recipe. You will see next to the flour that you can use my alternate flour measurement to make your bread lighter and more moist.

Gluten Free Bread Recipe

12/3 cup warm water (110degrees Fahrenheit)

3 eggs

1/4 cup vegetable oil

1 teaspoon cider vinegar or lemon juice

31/4 cups gluten free flour of choice or can reduce to 21/2 cups for lighter bread

21/2 teaspoon Xanthan gum

11/2 teaspoon salt

1/2 cup dry milk powder or regular milk

3 tablespoons sugar

21/4 teaspoon yeast.

Put wet ingredients (room temperature) in bread machine pan. Place dry ingredients on top. Make a small indentation in center and place yeast in it. Place bread machine in dough only mode. When it is done, use a rubber spatula to make sure loaf is evenly spread in pan. Now place the bread machine in bake only mode. Let cool and slice.

My five year old T1 diabetic/celiac loves this bread. I use rice flour.

Chocolate Cheesecake

 1/2 box of gluten free vanilla wafers.

2 dollops of margarine.

1 tub of Philadelphia Cream Cheese Pre-made Cheesecake

Sugar Free Chocolate Syrup

1/2 of a Chocolate Bar

Crush vanilla cookies in bottom of 13x9 pan. Melt margarine and pour over cookie crumbs and blend well. Press cookie crumbs to bottom of pan. Mix chocolate syrup in pre-made cheesecake to your desired amount. Pour over cookies. ]Shave chocolate bar over top. Chill and serve.

Snowball Brownie

 One Gluten Free Brownie Mix

8 oz. Cream Cheese

2 eggs

1/4 cup powdered sugar

1 tub of Cool Whip

1 cup of coconut

1 vanilla pudding mix

1 cup milk

Preheat oven to 350 degrees Fahrenheit. Make brownie mix per package directions and leave in bowl. In a separate bowl, mix together softened cream cheese, eggs and powdered sugar. Pour cream cheese mixture in the middle of the brownie mix. Bake for 45 minutes or until knife comes out clean. Cool for 10minutes then invert bowl onto a cake plate. While brownie cools,mix pudding mix, milk , Cool Whip, and coconut together. Ice brownie with Cool Whip mixture. Chill for one hour.

Continental Hamburgers

 3 lbs. of hamburger

Shredded Cheese

Onion

Butter

Form 8 hamburger patties. Chop onion and carmelize in butter. Place a small amount of shredded cheese and onions in center of 4 hamburger patties. Place othe four hamburger patties on top of other four patties. Seal the edges. Fry in skillet or place on broiler till done.

Eggs and Bacy Breakfast Potato Casserole Gluten Free

 1 lb. of bacon.

1 small onion

6 cups hash brown potatos.

2 cups shredded cheese.

6 eggs.

1/4 cup vegetable oil.

Broil or fry your bacon and set aside. Pour oil in a large rectangular baking dish. Place has brown potatos in dish. Bake according to package till almost done. Make 6 wells in potatos and crack an egg in each well. Bake till potatos and eggs are done. Cover with shredded cheese and place bacon in a criss cross pattern across the top. Bake till cheese is melted and then serve.

Gluten Free Chili

Gluten Free Macaroni

1 can of kidney beans or one 1 lb. bag of navy beans

1 can of tomato juice

Garlic powder

Onion or onion powder

Salt and pepper

Chili powder

1 can of diced tomatos

1 lb. of ground beef

Turn crock pot onto high. Add tomato juice and canned tomatos. Boil macaroni in sauce pan on stove. Rinse navy beans or open kidney beans and add to crock pot. Add garlic, onion, salt, pepper and chili powder to taste. Brown ground beef in microwave and add to pot. Drain macaroni when done and add to pot. Simmer for 6 hours and it's ready!

Gluten Free Corned Beef and Cabbage and Corned Beef Vegetable Soup

 This is a great meal for using the crock pot and making a meal that is good for two days. The first day is corned beef and cabbage and the next day it turns into corned beef vegetable soup.

1 corned beef roast

Basil

Onion or onion powder

Garlic powder

2 tablespoons of margarine

1 box or 2 cans of beef broth.

Salt and pepper

1 can of peas

1 can of corn

1 can of green beans

1 can of tomato juice.

1 lb.Navy beans if desired.

1 head of cabbage.

 

First day. Place roast and chopped cabbage in crock pot. Place in seasoning packet that comes with roast. Cover with water. Season with salt, pepper, garlic, onion powder and basil. Add margarine. Serve roast and cabbage , but save a portion of the end of the roast and some cabbage in reserve.

Day two. Chop remaining beef and place back in crock pot. Pour in beef broth and add more salt, pepper, garlic, onion powder and basil. Add two more tablespoons of butter. Add tomato juice, and each of of vegetables. Finally add beans after rinsing if desired.

 

Easy two day meal that is gluten free.

 

Gluten Free Sweet Sour Pork Lo Mein

 Gluten free spaghetti

Chopped pork

1 can of pineapple

Garlic

Onion

Salt

Pepper

Ginger

1 bag of frozen broccoli

Gluten free sweet and sour sauce

Brown pork in skillet or microwave. Boil broccoli and spaghetti together till done., Drain. Add pork, pineapple partially drained of juice, salt pepper, onion, garlic, ginger and sweet and sour sauce. Heat till hot and serve.

Gluten Free Broccoli Casserole

 This is one of our Thanksgiving Favorites!

1/2 box of gluten free macaroni

1 bag of frozen broccoli.

8 oz. of Velveeta cheese

1 tub of sour cream.

1 can of french fried onions.

Preheat oven to 350 degrees. Boil macaroni and broccoli together until done. Drain and place in baking dish. Cover with cubed Velveeta, sour cream and french fried onions. Stir well and then bake for 45 minutes.

Gluten Free Veggie Pie

 11/2 cup gluten free flour

2 T. milk

1/3 cup milk

2 T. sugar

1/2 teaspoon salt

1/3 cup water

1/2 cup mayonnaise

5 eggs

1 package of frozen broccoli

1 can of mushrooms drained.

1/2 an onion diced

6 oz. of Velveeta cubed

Preheat over to 400 degrees Fahrenheit. Cook broccoli according to package directions. Place soy flour in pie plate. Add 2 T. milk, sugar, salt and water to flour and mix well. May have to add more water to get to mix well depending on the flour used. Press well to pie plate. In separate bowl mix remaining milk, eggs and mayonnaise well. Add cheese, onion, mushrooms and broccoli. Mix and place in pie shell. Bake for 1 hour or until egg is no longer runny in center of pie.

*** Gluten Free Crab Rangoon

 Won Ton Wrappers

1 egg

3/4 teaspoon salt

2 cups rice flour

1/2 cup water

Beat egg and salt together. Add water and mix well. Mix with flour till a soft ball forms. Turn out into a floured board and roll out very thin. Cut into 31/2 inch squares.

Crab Rangoon

Won ton wrappers

8 oz. cream cheese

6 oz. of crab meat.

Green onion

Preheat oven to 350 degrees Fahrenheit. Spray muffin pan with vegetable oil. Place a won ton wrapper in each muffin cup. Mix crab, cream cheese and diced green onion together. Place a tablespoon full in each won ton wrapper. Bake for 10 minutes or until golden brown.

*** Gluten Free Stuffed Mushrooms

24 fresh mushrooms

1/2 cup crumbled sausage

1/2 cup mozzarella cheese

Heat broiler. Remove stems from mushrooms. Spray cookie sheet with vegetable oil. Place mushrooms on sheet with round side down. Broil for 5 mins. Cook and crumble sausage. place 1 tsp. sausage in each mushroom and cover each with mozzarella cheese. Bake for 3 mins. or until cheese is melted. 

***Gluten Free Cheesy Broccoli Dip

 1/2 cup chopped green and red pepper

1/4 cup chopped onions

2 tablespoons butter

16 oz. Velveeta cheese

1 pkg. of frozen broccoli

1/4 tsp. rosemary

A dash of hot pepper sauce

Saute peppers and onions in butter. Add Velveeta till melted. Add broccoli, rosemary and hot pepper sauce. Cook till broccoli is tender. Serve in a bowl with gluten free crackers.

*** Bacon Almond Wraps

 12 slices of bacon

24 almonds ( the ones with sea salt are great!)

1/2 cup mayonnaise

1/2 cup brown sugar

1/4 cup chili sauce

Heat oven to 350 degrees Fahrenheit. Cut bacon slices in half. Wrap each half slice around an almond. Place bacon wraps in shallow baking dish. Mix other ingredients together and pour over bacon wraps. Bake for 30 mins. or until heated through.

*** Gluten Free Meatballs

 2 lbs. of ground beef

2 slices of gluten free bread crumbled

1 cup water

2 eggs

1 bottle of BBQ sauce of choice

1 can of cranberry sauce

Garlic , onion powder, salt and pepper

Heat oven to 400 degrees Fahrenheit. Line two shallow pans with foil and spray with vegetable oil. Mix ingredients except cranberry sauce and BBQ sauce together and shape into 50 small meatballs and place in baking dishes. Bake for 16 mins. or until done. Meanwhile place BBQ sauce and cranberry sauce to a boil. Place sauce and meatballs together in sauce pan or you can place all ingredients in crock pot to keep warm throughout dinner.

*** Gluten Free Peanut Butter Cup Pie

 1 box of gluten free chocolate wafer cookies

1/2 stick of butter

8 oz. cream cheese

1/2 cups plus 1 Tablespoon creamy peanut butter

21/2 cups whipped cream

2 squares of Baker's Semi-Sweet Chocolate

1 pkg. of vanilla instant pudding

Crush cookies. Melt butter and add to cookies. Press to pie plate. Beat cream cheese and peanut butter until blended. Add milk and dry pudding mix and beat 2 mins. Whisk 1 cup whipped cream. Place in pie crust and refrigerate.

Microwave remaining whipped cream and chocolate for 2 mins. or until chocolate is completely melted. Cool completely.

Spread chocolate mixture over pudding mixture in pie plate. Microwave 1 T. of peanut butter and drizzle over pie.

*** Gluten Free White Chocolate Covered Pretzels

 Squares of white chocolate

1 bag of gluten free pretzels

Melt chocolate in double boiler. Dip each pretzel in melted white chocolate and let dry.

*** Gluten Free Peanut Butter Fudge

 3 cups sugar

1/2 cup milk

15 oz. peanut butter

1/2 stick of butter

1 teaspoon vanilla

Mix sugar and milk together and bring to a boil. Reduce heat, stirring constantly until mixture gets to soft ball stage. That is when a drop of water to it will cause it to make a soft ball. Immediately add butter , peanut butter and vanilla. Mix well and quickly place in 9x9 baking dish. Chill till ready to cut and serve.

Gluten Free Bubble Tea

 6 tea bags (black or green tea)

2 cups sugar or splenda

2 cups water

8 cups water

1 cup tapioca balls

fresh fruit of choice chopped up

large straw

Boil tea and chill. Place 2 cups water and 2 cups sugar or splenda in a saucepan. You can add some vanilla, caramel syrup, cinnamon and nutmeg to this syrup if you wish. Bring to a boil and then place on low heat and stir constantly till a syrupy consistency. Place in fridge to chill. Bring 8 cups water and 1 cup tapioca balls to a boil and then lower to medium heat and let boil for 25 mins. Stir occasionally. Turn off heat and let sit for 25 mins. Once all is cool, place some tapioca balls in bottom of glass, put in about 1 oz. syrup, pour in tea. You can put in some fresh fruit for some added flavor. Drink with a large straw. Enjoy!

Gluten Free Tortilla Pizza

 Gluten Free Corn Tortillas

Pizza sauce or salsa

Shredded cheese of choice

Toppings of choice

Preheat oven to 350 degrees Fahrenheit. Spray cookie sheet with oil. Line with tortillas. Spread either pizza sauce or salsa on tortilla. Sprinkle either shredded mexican cheese or mozzarella cheese on top of sauce. Place toppings on top of cheese. Could be pepperoni or sausage to mexican meat and refried beans. Place in oven and bake till cheese is melted. Enjoy.

Gluten Free Corned Beef and Cabbage

 It is St. Patrick's Day and we being an Irish Family remember it with food and prayer. Today's dish is Corned beef and cabbage with scallion mashed potatoes.

I thaw my corned beef and place it in the crock pot. I chop half a head of cabbage and add it in. Pour water over the top until covered. Add a large dollop of margarine or butter adn one can of beef broth. I flavor with some salt and pepper, basil, onion powder and some garlic. For the scallion potatoes, I chop an onion and brown it in butter. Then I boil the onions on low with some milk. Make your mashed potatoes as usual and add the onion. For this recipe, I like to leave some potato skins on my potatoes. Enjoy!

Chai Smoothie

 2 chai ea bags of choice.

1/2 cup orange juice

1/4 cup milk

2 cups ice

1 cup pineapple or fruit of choice

Brew tea and let steep for five minutes with only 1/2 cup water. Add all ingredients together in a blender and voila, you have a delicious chai tea smoothie!
