Green Lentils
Green lentils are the most intensely flavoured lentil and are naturally low in fat, high in protein and a source of fibre.
Easy to prepare, they do not need soaking and unlike other lentils they keep their shape when cooked.
Lentils are an ideal protein rich vegetarian dish, They are also great served with meat, fish or game.
COOKING METHOD - Serves
Pour 2 cups (200g) of green lentils in a wide heavy pan and cover with cold water. Bring slowly to the boil then cover with a tight lid and steam on a low heat for 20 to 30 minutes (until soft).
Season and serve.
Top Tips: When cooking, replace the water with a stock of your choice. You can also add bay leaves, thyme, garlic or chopped onion to the pan while cooking for extra flavour. Try the lentils with a dollop of butter or good olive oil. Delicious.
GREEN LENTIL AND SPINACH CURRY
Serves 4 -6 - Preparation time 40 to 50 minutes.
Ingredients:
2 tbsp groundnut oil
1 onion, chopped
1 clove garlic, crushed
200g button mushrooms(halved if large)
150g Green Lentils, washed ana drained
1 tbsp medium curry powder
500g spinach leaves,washed
Salt & pepper
STEP 1, Heat the oil in a medium saucepan and brown the onions slightly. Add the garlic and the mushrooms and fry gently for about 5 minutes.
STEP 2. Stir in the lentils, coating evenly and add the curry powder. Stir to soak up the juices and add water to cover the lentils.
STEP 3. Simmer gently with the lid on for 35-40 minutes untill all the lentils are soft, stirring occasionally. Check halfway through cooking time and add more water if necessary.
STEP 4. When cooked toss in the spinach leaves, taste and adjust seasoning and serve on a bed of boiled rice.
