Ingredients

  • 1 3/4 cups flour
  • 1 cup light-brown sugar
  • 1/2 cup ground flaxseed
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp cinnamon, ground
  • 1/2 tsp salt
  • 1/3 cup mashed banana
  • 1 1/2 cups grated zucchini
  • 1 egg, lightly beaten
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • cooking spray or softened butter to grease muffin tins

Instructions

  1. Preheat your oven to 180*C. Then, coat a 12 standard muffin tin with cooking spray or softened butter. After that, in a large bowl, whisk together the flour, ground flaxseed, brown sugar, baking soda, baking powder, the salt, and the cinnamon. Add the grated zucchini and mashed banana and then stir until well combined. In another small bowl, whisk together the milk, the egg, and the vanilla essence. Then, add that mixture to previously made mixture and stir until well combined but not too much as to over-mix.
  2. When finished making the batter, divide the batter among the muffin tin. Then bake for 20-25 minute until a toothpick or a knife can be inserted into the center of a muffin comes out clean. After baking let the muffins cool completely on a wire rack for approximately 30 minutes.

Ingredients

  • 2 tsp of flour, all-purpose
  • 1/3 cup of whole-wheat flour
  • 1 tsp of baking powder
  • 1/2 tsp of salt
  • 1 1/4 cups of brown sugar
  • 2/3 cup of flour, all purpose
  • 1/4 cup of canola oil
  • 2 tbsp of milk
  • 2 eggs
  • 1 1/2 cups of granola, whole-grain
  • 3/4 cup of dried mixed fruit, chopped
  • 1/2 cup of flaked sweetened coconut

Instructions

1. Preheat you oven to 180°C.

2. Coat a metal baking pan with cooking spray of softened butter and then dust with the 2 teaspoons all-purpose flour.

3. In a small bowl, combine the all purpose and wheat flours, baking powder, and salt, then stir with a whisk. Combine the sugar, oil, the milk, and the eggs in a large bowl and beat with a mixer at high speed until smooth. Add the flour mixture to this and beat at low speed until fully blended. After this, fold in the granola and the fruit and then spoon the batter into the prepared pan and sprinkle the coconut.

4. Bake for 20 minutes or until golden and then cool completely in the pan on a wire rack and cut into bars.

Ingredients

  • 1 tsp of butter
  • 1/4 cup of honey
  • 1/4 cup of almonds, slivered
  • 1/4 cup of hazelnuts, chopped
  • 1 1/4 cups of brown sugar
  • 1/4 cup of pecans, chopped
  • 1/4 cup of sunflower seeds
  • 1/2 tsp cinnamon, ground
  • 1/4 tsp of salt
  • 1/4 tsp of cardamom, ground
  • A pinch of ground cloves
  • 1 cup of raisins

Instructions

1. Line a baking sheet with foil or parchment paper and coat with cooking spray.

2. Heat the butter in a large nonstick pan over a medium-high heat. Stir in the honey and cook for 2 minutes until bubbles form around the edges of the pan. Add the almonds and next 7 ingredients. Cook this over a medium heat whilst stirring frequently for 8 minutes until the nuts are golden. When this is finished, stir in the raisins and then immediately spread the mixture out onto the prepared baking sheet and allow it cool completely.

Tortilla Cups With Yogurt And Fresh Fruit

A sweet, healthy snack for after school to fill those hunger pangs!

  • 6 tortillas
  • 2 tbsp of butter, melted
  • 2 tbsp of sugar
  • 1 1/2 cups of plain yogurt
  • 3 tbsp of brown sugar
  • 1 1/2 cups of fruit
  • 1 1/2 tsp of lemon juice

Instructions

  1. Preheat your oven to 180*C. Lightly brush both of the sides of the tortillas with the melted butter and sprinkle with the sugar. Place the tortillas over 6 muffin cups with them overlaping. Bake for 3 minutes until the tortillas are soft and easily bendable. Remove from the oven and, with the bottom of a glass or something similar, softly press the tortilla's into the muffin cups so forms the shape of the cup. Then bake the tortillas for 12 minutes until they are crisp and golden at edges. Then, remove tortillas from cups straight away and let them completely cool on a wire rack for 15 minutes.

  2. Meanwhile, in a small bowl, whisk together the yogurt and the 2 tablespoons brown sugar. In another small bowl, mix together the mixed fruit, 1 tablespoon brown sugar, and the lemon juice. Then, divide the yogurt mixture into the tortilla cups and top with the mixed fruit. Yum!

Ingredients

  • 8 crackers, square
  • 3 tbsp of marinara, jarred
  • 3 tbsp of mozzarella cheese, shredded
  • 2 tbsp of broccoli, chopped

Instructions

  1. Heat your oven to 180*C and place the 8 crackers on a baking sheet.

  2. Top the crackers with 3 tablespoons of the marinara sauce and 3 tablespoons of the shredded mozzarella cheese. Top half of the crackers with the chopped broccoli.

  3. Bake for 2 to 3 minutes until the cheese has melted. Tasty!

  • 16 small crackers/tiny toast
  • 1/4 cup of cheddar cheese, shredded

Instructions

  1. Preheat your oven to 180*C.
  2. Mix together the tuna, the mayonnaise, and the lemon juice. Season with salt and pepper to taste.
  3. Arrange the crackers on a foil-lined baking sheet. Top the crackers with the tuna mixture and the shredded cheddar. Bake for 2 to 3 minutes until the cheese has melted.

Herbed Hummus

  • 2 containers of plain hummus, store-bought
  • 1 cup of fresh mixed herbs, roughly chopped
  • corn chips to serve

Method

In a food processor or blender, combine the hummus and the herbs and blend for about 1 minute. Place in a bowl and serve with some corn chips. Simple!

  • 1 whole-wheat pita bread, cut into quarters
  • 1/3 cup of salsa and more for serving
  • 1/2 cup of cheese, shredded of your choice

Instructions

  1. Heat your oven to 180*C. Arrange pita pieces on a baking sheet on anoven tray, on a baking sheet. Dividing the salsa and cheese evenly on top of the pita pieces.

  2. Bake until the cheese has melted and the edges of pita are golden brown and crisp. Allow to cool for several minutes and serve with extra salsa for dipping.

Blueberry-Orange Parfaits

A fun, filling after school snack that not only will your kids enjoy eating, but you'll enjoy making it too!

Making Time: 15 Minutes

Yield: Makes 4 parfaits

Ingredients

  • 1 1/2 tbsp of sugar
  • 2 Greek-style yogurt tubs, 200gm each
  • 1/2 tsp of orange rind, grated
  • 2 cups of blueberries, fresh
  • 1/4 cup of wheat germ
  • 2 cups of orange sections

Method

Combine the sugar, the orange rind and the yoghurt in a small bowl, and stir until well combined. Spoon a 1/4 cup of blueberries into each of the glasses. Spoon 2 1/2 tablespoons of the yogurt mixture over the blueberries in each glass and then, add a 1/4 cup of orange sections to each serving. Repeat these layers again with the remaining blueberries, yogurt mixture, and orange. When finished sprinkle the wheat germ over each serving.

Peanut Butter-Banana Spirals

A sweet tasting, yet healthy snack for after school that makes everyone excited!

Making Time: 15 Minutes

Yield: Makes 4 servings of 6 pieces

Ingredients

  • 1/2 cup of smooth peanut butter
  • 1/3 cup of vanilla yogurt
  • 1 tbsp orange juice
  • 2 bananas, sliced
  • 4 tortillas 8-inch
  • 2 tbsp of honey-crunch wheat germ
  • 1/4 tsp cinnamon, ground

Instructions

  1. Combine the yoghurt and the peanut butter and stir until it is a smooth mixture. Drizzle the orangle juice over the bananas and then gently mix to coat the bananas.
  2. Spread an equal amount the peanut butter and yoghurt mixture the tortillas, leaving a 1.5cm border. Arrange the banana slices over the peanut butter and yoghurt mixture. Then combine the wheat germ and the cinnamon, and sprinkle this over the banana slices. Then, roll up the tortillas carefully as not to split and then slice each roll into 6 pieces. Then let your kids enjoy the tasty snack!
