5 Quick Recipes Using White Rice
White Rice
White Rice is one of those things that most people have in their pantry. It is cheap, last for 30 years in most cases and is used in many cuisines around the world. I always have several pounds of it on hand to use in many quick dishes. Here are some of the best quick recipes that I use white rice in.
Fried Rice
Fried rice is served at least a couple of times a week in my house. It is a great way to use up leftover meat or veggies that need to be used up. The recipe can change to what is on hand and it will always taste great. It is also a great recipe to omit the meat and use for your Meatless Monday.
2 cups cooked rice
1-2 cups sautéed veggies and meat
1 egg (beaten)
1 tsp. oil
Soy sauce to taste
Sautee veggies till softened and meat till cooked (reheated)
Add beaten egg and stir.
Add rice when egg is cooked and stir in soy sauce.
Korean Meat and Rice
I have always heard this called bulgogi, however I have heard it called Korean meat or barbeque as well. Sweet and savory, as well as super quick to make. I like to add mushroom and onions into the recipe, though any other veggie could be added and cooked with the meat.
1# raw meat (recipe can be made with pork, chicken or beef)
1/4 cup soy sauce
1/8 cup sugar
1 tsp. garlic powder
1/2 tsp. red pepper flakes
1 tsp. oil (Preferably sesame)
Marinate meat in soy, garlic and sugar (overnight is preferable, though you don't have to)
Grill or sautéed meat till cooked with oil
Slice meat, top with pepper flakes and serve over cooked white rice
Creamy Chicken and Rice Casserole
This takes a little longer to cook, but the prep time is under 5 minutes. Just mix ingredients and let it bake for 45 minutes while you do something else. You can also add a variety of raw or frozen veggies to the casserole, such as peas, onions, carrots or whatever you have on hand.
1# chicken breast (with or without bone)
1 can cream of (mushroom, celery, chicken, etc)
1 cup of white rice-uncooked
1 1/4 cup of water
Mix soup, water and rice together in baking dish.
Set chicken on top and cover
Back for 45 minutes or so at 350 degrees. If using boned chicken, check biggest piece for it to be finished and put back in when needed.
Chicken Fajita Soup
This recipe is easy to throw in a slow cooker before you go to work, or whip up in under 30 minutes on a stove top.
1# chicken breast (If boned, must debone later)
1 cup sweet pepper
1 cup onions
1 can diced tomatoes
1 can black beans (any variety really)
4 cups cooked rice
2 tsp. chili powder
2 tsp. cumin
1 tsp. garlic
salt and pepper to taste
2 tsp. lime juice (optional)
Mix all ingredients except rice and bring to boil.
Simmer for 30 minutes on stovetop and serve over rice.
Great topped with sour cream, scallions and cheddar cheese
Meatloaf
Meatloaf is a quick and easy way to make a bit of meat stretch. It is also great for leftovers and for sandwiches for lunches. While many recipes will call for oatmeal, I have found that rice works better for my family and seems to stay more moist. Another quick prep and bake meal for quick dinners on weeknights.
1# ground beef
2 cups cooked rice
1/4 cup diced onions and/or mushrooms
1 egg-beaten
1tsp. garlic powder
salt and pepper to taste
1/4 cup ketchup
Mix meat, seasonings, onion, mushrooms and rice with egg and form loaf.
Top with ketchup
Bake for 30-45 minutes on 350 degrees
Serve with mashed potatoes, gravy and salad
