One dish meals are great for many different reasons. They are easy to serve and easy to clean up. They are generally easy to prepare and can often be prepared in advance. All of these reasons make them great choices for breakfast, a time when we are often bleary-eyed or rushed, and often both.
One Dish Meals for Any Occasion:
Easy and Delicious Sausage and Egg Breakfast Casserole
The one dish meal I am sharing with you today reminds me of a casserole, a pizza and a quiche all rolled into one.
It contains your basic breakfast ingredients: sausage, eggs, and bread. With the addition of a few more basic ingredients you can create a meal that can be served to guests and is especially good for holiday gatherings.
But why wait? With a dish this easy to prepare and this yummy - you can serve it anytime you wish!
Ingredients
- 1 can crescent rolls
- 1 pound sausage, ham or bacon
- 6 eggs
- 3 T. picante sauce
- 1 T. milk
- 2 c. grated cheese
Preheat oven to 350 degrees F (177 degrees C).
Press crescent roll dough into bottom of 9" x 13" pan.
Break sausage up and brown in a skillet. (Cube ham into small pieces. Cut bacon into small pieces, brown and drain.) Evenly spread meat on top of dough.
Combine eggs, milk and picante sauce. Beat with mixer until eggs are fully beaten.
Pour egg mixture over the sausage and dough.
Sprinkle with cheese.
Bake until bubbly and brown, approximately 30-40 minutes.
Serve and enjoy!
This dish can be prepared in advance, covered and placed in refrigerator overnight, to be cooked in the morning.
It can also be cooked, cut into serving sized pieces, individually wrapped and frozen. Individual servings can be heated up with microwave as needed.

I was thinking it looked great, but have you tried a crunchy crust on top? Maybe some saltines or other cracker put on about ten minutes before removing from the oven? Just a thought...
