About Sauces
The 3 sauces recipes that will be detailed below have been essential in my day to day cooking. Once you have mastered them you can make a few very simple variations to make wildly different meals. You can pair them with pasta, different types of meats or even in pies. Perfect and quick for any occasion. The sauces described below are a cheese sauce, a pepper sauce and a piquant tomato sauce.
Cheese Sauce
Ingredients
- 1/2 Pint Grated Cheese
- 1 Tbsp Flour
- 2cm Cube Butter
- 1/2 Pint Milk
- Dash of Paprika
- Salt and Pepper to taste
Instructions:
- Put Cheese, flour, pepper, salt and paprika into a saucepan and stir well.
- Add milk and butter.
- Pot on low heat and boil, stirring constantly.
- Boil until sauce reaches desired consistency.
Hints and Tips
You can add macaroni to this sauce (and another cup or so of cheese) for a yummy macaroni cheese. You can add penne pasta to this recipe and any vegetables that you like, put it all in an oven dish and bake it for ~20 mins to have a cheesy pasta bake. You can also use this recipe in a lasagna as one of the sauce layers.
Pepper Sauce
Ingredients
- 1 &1/2 Red Peppers (chopped)
- 1/2 Onion (chopped)
- 1 clove Garlic (chopped)
- 1 Tbsp Cream
- 1 Tsp Sugar
- Salt and Pepper to taste
Instructions
- Fry peppers, onions and garlic in a saucepan over medium heat for 5-8 minutes until soft
- Add sugar and cream, and mix
- Use a hand blender to liquidise.
- Season with salt and pepper to taste.
Hints and Tips
If you are looking for something spicy you can add half a teaspoon of chilli powder to the recipe. Sometimes I remove the peppers from this recipe, add a chicken or vegetable stock cube, and substitute the cream for a couple of cups of milk; then I can use this sauce in chicken pies or with rice and chicken.
Piquant Tomato Sauce
Ingredients
- 1 Tbsp Oil
- 1 Onion (sliced)
- 400g Tinned Tomatoes
- 1 Tsp Black Pepper
- 1 Tbsp Tomato Puree
- 1 Tbsp White Wine Vinegar
- 1 Tsp Sugar
Instructions
- Heat the oil in a saucepan, fry onions until soft. Add the tomatoes.
- Add the rest of the ingredients, bring to boil and simmer for 5 minutes.
- Liquidise with a hand blender
Hints and Tips
If you add mince meat and mushrooms this sauce works really well as bolognese sauce that you can serve with pasta. You can also cover chicken breast in this sauce, sprinkle cheese over the top and bake in the oven.
