1. Taco Salad

If you have a pot of chili in the fridge, along with some basic salad ingredients, you can make a delicious taco salad in no time at all. Place chopped lettuce (your favorite kind) in a bowl, ladle hot chili on top of the lettuce, sprinkle with shredded cheddar or taco cheese and top off with your favorites out of diced tomatoes, chopped green onions, sliced black olives, diced green chiles, and sliced jalapeno peppers. Feel free to top off with your favorite flavor of salsa or picante sauce.

2. Stuffed Baked Potato

You can turn a simple baked potato into a delicious main dish by topping it off with chili and a few choice toppings. Cook a large baked potato in the oven or microwave, then split and spoon a generous portion of chili on top of the potato. Top it off with as few or as many tasty toppings as you want.
