How to prepare a Delicious “TRINI” Potato Pie


I’ve decided to share” my way” of making a mouth watering potato pie with you. I hope that you’ll like it and try it also.

Ingredients

  • 2 lbs. of Potato

  • Cheddar Cheese (amount desired)

  • 2 Sweet peppers

  • ½ Carrots

  • ¼ Onion

  • ¼ cup of celery

  • 4 large eggs

  • 1 ½ cup of milk

  • 3 pinches of black pepper

  • 1 tsp Brown Chinese seasoning

  • 1 tsp of All purpose seasoning

  • 3tbs of ketchup

  • 2- 3tbs red butter/ golden ray

  • 2tbs of blue band/ butter

  • 4tsp of oregano

Preparation

  • Firstly scrub potatoes until clean under flowing water, cut them into halves or cubes however small you will like them to be then place into boiling water. Add a little salt and leave to cook until its good enough. “Do not boil to soft"
  • Grate cheddar cheese and place in a bowl/plate
  • Grate ½ of carrot or “amount desired”
  • Dice ¼ onion and 2 pimentos into small cubes
  • Slice 1 red sweet pepper into small cubes
  • Chop parsley into little bits
  • Crack eggs remove the freshness and place into a bowl
  • Mix 1 ½ cups of milk add eggs, black pepper, a pinch of salt, brown Chinese seasoning, all purpose seasoning and ketchup and mix thoroughly with a swizzle stick or a spoon.

Instructions


  • After the potato has been cooked to desired texture, you can either peel the skin off or leave it on.

  • Put a pot to hot on the stove and add 2tbs of butter and 3tbs of golden ray and leave to melt after the butter has been melted. Place carrots, sweet peppers, onions and pimentos and stir fry.

  • When the vegetables has been fried thoroughly throw in cubed potatoes and stir up well, pour some milk mixture, cheese, parsley and oregano stir well and lower heat and stir continuously in order to avoid the eggs from frying and becoming brown. Sprinkle some Chinese seasoning, all purpose and black pepper and repeat this procedure until all of the potatoes are well cover and creamy with the other ingredients.

  • Grease a large Pyrex bowl and pour potato mixture evenly into the dish and then sprinkle cheese to the top of pie.

  • Light oven and leave it on 220 - 250° F and place potato pie into the oven and leave to cook until golden brown. As each oven may differ in its cooking temperature.


After the pie is finished serve and enjoy with stew chicken, beef or pork.
