Kenneth is a rural citizen of Hamilton, Ala., and has begun to observe life and certain things and people helping him to write about them.

Special Notice:

This recipe is being used by permission from Pam Avery and Alexis Nash, Hamilton, Ala., "Home of The South's Best Cooks." I know these two girls really well and I can assure you that you can use the ingredients in (this) recipe and feel confident that you and your family will be able to dine and enjoy this dish without worry. KA

Here Are Your Delicious Ingredients:

1 lb. elbow macaroni

1 can golden mushroom soup

1/2 c. finely-chopped onions
2 Tbsp. chopped pimento
1/4 tsp. pepper
1 lb. cheddar cheese, grate
1/2 c. mayonnaise
1 can sliced mushrooms, drained
2 Tbsp. chopped green pepper
Salt, to taste

Now, You Are Almost Ready . . .

Cook macaroni; drain. Add remaining ingredients and mix well. Place into baking dish. Bake at 350 degrees until bubbling. Serve. Note: I know that you may feel strange at wanting to be first to serve, but there may not be any left of this wonderfully-delicious recipe.

You will be surprised when I mention that I have never eaten macaroni and cheese but I have heard about that dish for many years. I will probably look for the ingredients soon and try it.

Kenneth, this sounds really good and I might try this. I would have to use gluten-free pasta but everything else is fine. I love mac and cheese, especially homemade. Looks yummy!

Mac and Cheese is one of my favorite meals. This recipe sounds especially good so I'm going to try it for sure. I wish you had mentioned how long to bake for though. Now I'll have to keep opening the oven door to check. Oh well...
