An easy way to cook Vegetable Pulao

Introduction


Vegetable pulao is a delicious mouth-watering recipe from North Indian regime relished in every Indian home.It is an appetizing combination of rice and veggies served with freshly made raitha (onion sauce) and salad. Vegetable pulao is more nutritious when you add vegetables, mushroom or Soya Nutri nuggets.

Ingredients


1 cup basmati rice 50 gms shelled peas

50 gms Chopped Carrot

1 chopped onion(Should chop the onion diagonally so that the taste is retained on peeling the outer layer and adds more taste to the rice)

50 gms Potato chopped evenly 50 gms chopped Cauliflower(cleaned with hot water and then lukewarm water )

1 table spoon Cumin seeds

2 Cinnamon sticks

2 Cloves

2 black cardamoms

2 bay leaves

1 table spoon of Ghee or Oil 2 cups of water

Salt to taste

Black pepper powder to taste

Chopped Cashew nuts fried golden brown in Ghee (Optional for additional taste. Not advisable for low-calorie preference)


Method of Preparation

Wash and Soak the rice for 20 minutes in water(preferably in warm water).

Drain the excess of water and keep aside In a microwave safe bowl, microwave oil or ghee for 30 seconds at 100% power Add Cumin,cinnamon,cloves,black cardamoms, bay leaves, salt and chopped onion and microwave at 100% power for 2 minutes.

It is a must to stir in between Add all other vegetables like carrot,cauliflower,potato,shell peas to soaked rice and add 2 cups of water and microwave covered at 100% power for 9 to 10 minutes and then at 60% power for 5 to 6 minutes.

Stir in between. Allow the dish to stand for 5 minutes .

Garnish the entire dish with fried Cashew nuts adding more taste and aroma to the delicious dish.

Serve the Vegetable rice with Onion Sauce or ginger garlic sauce for more delicacy.
