Apple Cinnamon Cake

Apple Cinnamon Cake yummy!

Serve this moist and delicious cake warm or cold with a cup of
good, strong coffee. Make sure the butter is soft before you mix
the cake in step 4.

Makes about 12 slices

250g/9 oz self-raising flour
1 1/2 tsp ground cinnamon
175g/6 oz soft dark brown sugar
175g/6 oz soft butter or margarine
3 medium eggs
4 tbsp apple juice or milk
2 medium cooking apples, such as Bramley, total weight
about 500g/1 Ib 2 oz
Icing sugar for dusting

1. Grease a 20cm/8 in round cake tin (preferably one with a
removable base) and line it with baking paper.
2. Preheat the oven to 180"C, Fan 165"C, Gas 4.
3. Sift the flour and cinnamon into a large mixing bowl and
add the sugar and butter or margarine. Lightly beat the
eggs with the apple juice or milk. Peel the apples, quarter
and remove the cores and chop into small pieces.
4. Add the egg mixture to the flour mixture and beat well until
smooth and light (use a wooden spoon or an electric
mixer). Stir in the apples.
5. Spoon the mixture into the prepared tin and gently level
the top.
6. Put into an hot oven and cook for about 1 hour 10 minutes
or until the cake is golden brown, firm to the touch and a
thin skewer inserted in the centre comes out clean with no
uncooked cake mixture stuck to it.
7. Leave the cake in the tin for 15-20 minutes before carefully
turning it out and leaving on a wire rack to cool.
8. Serve in wedges wilh some icing sugar sifted over the top.
